Banana Pumpkin Bread





INGREDIENTS:


2 ripe bananas, mashed


2 eggs


1/3 cup vegetable oil


1 1/3 cups canned pumpkin puree


1/2 cup honey


1/2 cup white sugar


2 1/2 cups all-purpose flour


1 teaspoon baking powder


1 teaspoon baking soda


1/2 teaspoon salt


2 teaspoons pumpkin pie spice


1 teaspoon ground cinnamon


3/4 cup raisins (optional)

DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan.


In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan.


Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.Recipes with pumpkin and banana?

Pumpkin Pancakes with Root Beer Syrup, Caramelized Bananas, and Cinnamon Whipped Cream





Pancakes:


1 cup pastry flour


1/4 cup sugar


1/2 teaspoon cinnamon


1/16 teaspoon cloves


1/16 teaspoon nutmeg


1/16 teaspoon allspice


1/4 teaspoon salt


1/2 teaspoon baking powder


1 cup pumpkin puree


2 eggs


1 cup half-and-half


1-ounce melted butter


4 egg whites, whipped to soft peak


2 tablespoon vegetable oil


Root Beer Syrup:


4 (16-ounce) bottles root beer


2 tablespoons butter, room temperature





Caramelized Bananas:


4 bananas, cut in half lengthwise


2 ounces butter


4 tablespoons sugar





Cinnamon Whipped Cream:


4 ounces whipping cream


Cinnamon


1 tablespoon sugar








To make pancakes, sift together all of the dry ingredients. In a bowl, combine the puree, whole eggs, and the half-and-half. Add the flour mixture and stir, being careful not to over mix the batter. Finish with the melted butter. Gently fold in 1/2 the egg whites to loosen the batter and when the whites are nearly incorporated, fold in the remaining egg whites.


Heat the griddle to medium heat. Drizzle enough vegetable oil to prevent sticking and spoon batter onto griddle, spreading them with the back of the spoon. When pancakes are golden brown, flip to finish cooking.





To make the root beer syrup, reduce root beer until it becomes a thick glaze. Whisk in the butter and spoon over pancakes.





Cut the bananas in 1/2 lengthwise. Heat a saute pan to medium and melt the butter and sugar. Stir until sugar dissolves and begins to caramelize. Add the bananas and toss to coat.





To prepare the whipped cream, whisk the cream, cinnamon, and sugar in a bowl until it holds a stiff peak.





To serve, stack the pancakes on each plate. Spoon the syrup over the pancakes, top with the caramelized bananas and a dollop of cinnamon whipped cream.

    You can use any of the other extract flavors - such as Banana, or Almond. If you do use Almond extract, you may have to cut back on the amount (maybe by 1/4 or 1/2 tsp) because it is very strong.

    Anyone get the South African Banana Salad recipe from the Disney Channel?

    It's on a short thing that lasts about 3 minutes between shows, about all of the different ways you can eat bananas from all around the world. The salad is made of lettuce, Bananas, onions and some kind of jelly or jam, was it apricot or ? I didn't hear it because they go pretty fast, I'd like to make it.

    INGREDIENTS:


    2 bananas


    2 tablespoons golden syryp


    戮 cup sugar


    1 egg


    1 cup self-raising flour


    pinch of salt





    WHATCHYA GOTTA DO:


    Heat oven to 180掳C (160掳C fan forced).





    Grease and line the base of a loaf pan.





    In a medium bowl, mash bananas then add golden syryp. Add sugar and stir in.


    Add egg, sifted flour and salt and lightly mix until combined.





    Pour into loaf pan and cook for 30 minutes or until a skewer is inserted into the middle comes out clean.





    Allow to cool in tin for 10 minutes, then turn onto wire rack to cool.





    Enjoy it warm straight from the oven or lightly grill it and then enjoy with butter melting on top.

    I've tried a lot of different recipes and I think this one is the best. It's so moist and it's super easy to make. If you like making fruit breads I have included a few more that my grandma used to make, enjoy!








    Banana Nut Bread





    1 陆 cups sugar


    陆 cup butter, melted


    3 bananas, mashed


    2 eggs, beaten


    2 cups flour


    陆 tsp baking soda


    1 tbs sour cream added to regular milk to make 1/3 cup

    1 tsp vanilla

    Mix all ingredients together in a large bowl until blended well. Add chopped nuts, mix together. Pour into greased loaf pan about 1 inch from the top. Bake at 350 for 60 minutes.








    Strawberry or Pineapple Bread





    2 鈥?10 oz pkg or 2 boxes frozen strawberries or


    1 鈥?20 oz can crushed pineapple, drained


    4 eggs, beaten


    1 录 cup vegetable oil


    2 cups sugar


    3 cups flour


    1 tsp baking soda


    1 tsp salt


    2 tsp cinnamon


    1 陆 cups chopped nuts (walnuts or macadamia)





    Blend strawberries or pineapple with eggs, oil, and sugar. Sift flour, baking soda, salt, and cinnamon together and add to egg mixture. Stir in nuts.





    Put into 2 or 3 buttered aluminum loaf pans depending on size of pans. Bake at 350F for 1 hour. Makes 2 regular size loafs or 4 small ones. If using small pans decrease the cooking time to 45 minutes.








    This can be made with other flavors as well (like apricot), but the plum is best.





    Grandma鈥檚 Plum Bread with Glaze





    2 cups flour


    1 tsp soda


    1 陆 cups sugar


    1 tsp cinnamon


    陆 tsp nutmeg


    2 small jars plum baby food or 1 can whole plums, seeds removed and pureed in food processor


    1 cup oil


    1 cup chopped walnuts


    1 tsp vanilla





    Add ingredients in large mixing bowl, mix well. Pour in greased loaf pan and bake at 350 F for 45 min to 1 hour, until bread tests not doughy with toothpick. Pour glaze over bread while still hot.





    Glaze:


    录 cup margarine


    录 cup sugar


    2 tbs milk


    1/8 tsp baking soda


    录 tsp vanilla





    Add to saucepan and simmer 3 minutes.

Just remember one thing in case any of the posters haven't yet mentioned it, make sure your bananas are more on the RIPER side! This makes them so much sweeter!!

    MAMA'S SOUTHERN BANANA PUDDING





    An easy banana pudding, made with banana cream pudding mix, vanilla wafers, and bananas, baked with a meringue topping. YUMMY!!





    Ingredients:





    *1 large package banana cream flavored pudding and pie filling (6 serving size)


    * 3 egg yolks, slightly beaten


    * 3 - 3/4 cups milk


    * 30 - vanilla wafers


    * 2 large ripe but firm bananas, sliced





    FOR MERINGUE:


    * 3 egg whites


    * dash salt


    * 1/3 cup sugar





    Preparation:


    In a saucepan, combine pudding mix, egg yolks, and milk. Cook over medium heat, stirring, until mixture comes to a boil. Remove from heat. Arrange a layer of vanilla wafers in bottom of a 2-quart baking dish. Add a layer of banana slices and then a layer of pudding. Continue layering the vanilla wafers, banana slices, and pudding, ending with the pudding.


    Beat egg whites with the salt until foamy. Gradually beat in the sugar then continue to beat until mixture forums stiff shiny peaks. Spoon meringue over pudding, spreading all the way to the edge of dish to seal. Bake at 375掳 for about 10 to 15 minutes, until meringue is cooked and lightly browned. Serve warm or chilled. Store in refrigerator.


    Serve 10 to 12.

    Ingredients





    * 1-1/2 cups all-purpose flour

    * 1/8 teaspoon ground nutmeg


    * 2 slightly beaten eggs

    * 1/2 cup mashed ripe banana (2 small)


    * 1/2 cup apple butter


    * 1/4 cup canola or cooking oil





    Directions





    1. Grease and flour the bottom and 1/2 inch up the sides of a 9x5x3-inch loaf pan; set aside. In a large bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in center of the flour mixture; set aside.





    2. In a medium bowl combine eggs, sugar, banana, apple butter, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter into prepared pan.





    3. Bake in a 350 degree oven about 45 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing. Makes: 1 loaf (16 servings)

    120 ml water (about 37掳C)


    1 egg


    0.5 teaspoon vanilla flavor (optional)


    3 tablespoon honey


    1 small banana (in dices)

    110g wheat flour


    140g bread flour


    15g butter or margarine or olive oil





    a. Mix flour, water, and butter in a mixing bowl.


    b. Kneed it to a smooth dough, with the dough mixer.

    d. Make the dough first flat, then in three overlap folds.

    I just buy the mix at trader joes. Add two banana's and 1/2 cp of wall nuts or pecans. Cranberrys are good also./some times i add 1/2 cup of sour cream or plain yogurt.

    I live in Florida, along the beach in Palm Beach area. It gets so hot down here. I used to live in New York and during the winter months it would get so unbearably cold that you couldn't wait for spring to roll around. In March the cold was like torture because you would have one nice day and then it would dip into that frigid windy cold that just won't go away.





    Florida is similar to that except it is relentless heat and humidity. Just recently we bought a house on a beautiful lake in Tennessee. Now the summer is spent relaxing on a lake in the mountains. It is peaceful and calm. When the world frustrates me too much,I jump on a plane and sit on my deck and chill. I've got the best of both worlds now.

    Use half %26amp; half rather than milk in any of the above recipes and it will be far better. I also recommend making it only 1 day in advance-- the cookies soften a bit but the bananas don't get gross.
    Banana Pudding





    3-1/2 tablespoon all-purpose flour


    1 1/3 cup sugar


    Dash of salt


    3 eggs, separated


    3 cup milk


    1 teaspoon vanilla extract


    1 (12 oz.) pkg. vanilla wafers


    6 medium bananas


    1/4 cup plus 2 tablespoon sugar


    1 teaspoon vanilla extract





    Combine flour, 1 1/3 cups sugar and salt in a heavy sauce pan. Beat egg yolks; combine egg yolks and milk, mixing well. Stir into dry ingredients; cook over medium heat, stirring constantly, until smooth and thickened. Remove from heat; stir in 1 teaspoon vanilla. Layer one-third of wafers in a 3 quart baking dish.     Beat together for 10 min:


    1-box powdered sugar


    2- sticks oleo (not diet margarine)


    2- eggs


    T- vanilla

    Spread a layer of banana slices


    Spread on 1 large can drained pineapple (optional)


    Cover with cool whip and sprinkle with nuts
    In order to save money on the ingredients, I personally use the store brand name. They taste just as good as the name brand, but for a fraction of the cost.





    I line the bottom of the pan with vanilla wafers, then make the pudding as directed. I slice up bananas and put into the pudding, and pour the mixture into the pan. Then, I line the sides of the pan with vanilla wafers. I set it in the fridge for at least 2 hours before serving!!

    3 bananas, sliced into 1/4 inch slices

    To Make Meringue: In a large glass or metal bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until whites are stiff. Spread meringue into pie pan, making sure to completely cover pudding layer.


    Bake in preheated oven for 15 minutes, just until meringue is browned. Chill before serving.

    Mash as many bananas as you think are needed, add cream or milk until you think its at the right cosistency with an electric blender. Now thats it.

    Banana pudding is not currently a fashionable dessert. You never see it served in ';good'; restaurants. And when it is found in a restaurant, more than likely it's a dollop of instant banana-flavored pudding with a vanilla wafer stuck in it and a dab of non-dairy whipped topping.





    Perhaps banana pudding gets no respect because of the vanilla wafers. It's likely that vanilla wafers, being ordinary cookies in the familiar yellow box found in stores everywhere, are regarded as pedestrian among gourmets. Of course, your trendy tiramisu, which uses packaged lady fingers as a base, gets away with it.





    When I began thinking about writing this article, I started wondering about the origins of this wonderful dessert. I wondered if banana pudding existed before vanilla wafers and, if that is the case, when did vanilla wafers get their start? And is banana pudding a southern dessert? And if so, why, because good bananas are available everywhere year-round. But there need not be so many questions here. Banana pudding merely lacks glamour, because it certainly doesn't lack anything else you would want in a dessert.





    Is it easy to make? Yes, it is. Well, you have to do a little more than boil water, but it's definitely not difficult to make. It's wonderful warm from the oven or cold from the refrigerator. It requires no exotic ingredients, other than the bananas which, when you think about it, really are pretty exotic. Banana pudding may be the original comfort food.





    The key to great banana pudding is ripe bananas. In fact, they should be very ripe. Yellow with little brown specks. Bananas ripen best in the dark, so put them in a paper bag and check on them until they're perfect.     1/2 teaspoon vanilla extract


    Preheat oven to 375掳F.





    Give this old favorite a try.
    Take a large box of vanilla pudding mix, make the pudding up and in a large bowl add to the pudding, 1 tub of cool whip ( it can be store brand) one can of sweetened condensed milk, stir until mixed well, then add your vanilla wafers and sliced bananas.





    This a down home southern Alabama recipe, it is rich but very good its always a crowd pleaser.
    you will need 3cups milk , 6 tablespoons margarine, one half cup of sugar , 6 tablespoons flour 2 teaspoons vanilla extract and bananas a sauce pan melt margarine in sauce pan with the sugar, stir in flour , mix will be bulky , slowly pour in the milk on medium heat stir until mixture thickens, when thickened add vanilla stir, add sliced bananas let cool put into pudding cups ,yum yum!

    STRAWBERRY BANANA SMOOTHIE


    1 sliced banana


    3-4 large strawberries (top sliced off)


    2 cups milk


    1/4 cup of yogurt (optional)


    1 1/2 teaspoon sugar


    5 ice cubes


    Combine all ingredients except sugar in blender. Blend until smooth and creamy. Add sugar
    Ripe banana, ripe strawberries, heavy cream and a scoop of vanilla ice cream [Hagan Daz, Stone Cold or any GOOD ice cream. Blend and add some ice cubes if needed.
    no yogurt strawberry daiquiri mix fresh strawberries and bananas and ice mix and it is great
    Blend strawberrys and bananas with milk ice and slimfast powder.
    Use frozen strawberries and add almond or soy milk.
