Simple Banana Recipes?

My partner had an accident and people keep bringing us fruit! Theres too much to eat and we especially have loads of bananas. So does anyone know of any easy recipes that use them. Two problems, we dont have a blender and our oven isnt working! Have a stove tho :) ThanksSimple Banana Recipes?

One thing you can do is freeze extra bananas. I do it all the time and use them another time for banana bread or something. As a matter of fact you can freeze most fruit, including whole apples! It does vary how you prepare different fruits after thawing though.

Stovetop Banana Pudding

Ingredients:


2 eggs


1 1/2 cup milk


1 pinch salt


1 tablespoon vanilla extract


3/4 cup all-purpose flour


6 bananas, peeled and sliced


1 package (16 ounce size) vanilla wafer cookies


1 pinch ground nutmeg


1 pinch ground cinnamon


Directions:


In large pot, combine eggs, milk, salt, vanilla, and flour. Stir over low heat until mixture boils and thickens. Remove from heat and stir in bananas and cookies. Top with nutmeg and cinnamon to taste. Serve.








Bananas Foster


4 servings


Ingredients:


1-1/2 teaspoon cornstarch


1/8 teaspoon apple pie spice


1 can (5-1/2 ounces) unsweetened apple juice


1/4 teaspoon rum extract


1/8 teaspoon maple flavoring


1/8 teaspoon butter flavoring or vanilla extract


2 medium firm bananas, sliced


Vanilla ice cream or frozen yogurt


Directions:


In a small saucepan, combine the cornstarch and pie spice. Stir in the apple juice until smooth. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Remove from the heat; stir in extracts and flavorings. Add bananas and heat through over medium heat.


Serve warm over ice cream or frozen yogurt.

You could also add chopped bananas to the top of cereals, or add sliced banana to peanut butter or nutella sandwiches. A fruit salad topped with natural yoghurt, or bananas with custard is another option.





You could also make banana splits - top with ice-cream, whipped cream, chocolate chips, chocolate sauce and chopped nuts.

Healthy Hawaiian Fruit Salad with banana dressing





You really can just use the dressing by itself to drizzle over pound cake, or banana bread (if you could bake).

Ingredients:


3-1/2 cups cubed fresh pineapple


3 cups honeydew balls


1-1/2 cup cantaloupe balls


1 medium mango, peeled and cubed


1 cup green grapes


1 cup halved fresh strawberries


1 kiwifruit, peeled, quartered and sliced





Banana Dressing


2 small bananas, cut into 1-inch pieces


1 cup (8 ounces) reduced-fat sour cream


1/4 cup packed brown sugar


1-1/2 teaspoons lemon juice





Directions:


In a large bowl, combine the first seven ingredients. In a food processor, combine the bananas, sour cream, brown sugar and lemon juice. Cover and process until smooth. Serve with fruit.





Nutrition information per 3/4 cup fruit with 2 tablespoons dressing:


112 calories, 2g fat (1g saturated fat), 6mg cholesterol, 21mg sodium, 24g carbohydrate, 2g fiber, 2g protein.


Diabetic exchange: 1-1/2 fruit, 1/2 fat

Freeze bananas, then dip into melted chocolate. Return to freezer for about 1 hour before serving. Kids love this!
