This is the easiest recipe I know....I've been using it for over 25 years.
BANANA BREAD:
1 cup sugar
1/3 cup margarine or butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (3 to 4 medium)
1/3 cup water
1 2/3 cup all-purpose flour*
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped nuts
Heat oven to 350 degrees. Grease bottom only of loaf pan. 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches. Mix sugar and margarine in 2 1/2-quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened; stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, 8-inch loaf 1 1/4 hours, 9-inch loaf 55 to 60 minutes; cool 5 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.

BANANA NUT BREAD
INGREDIENTS
2 1/2 cups white sugar
1 cup shortening
3 eggs
1 1/2 cups mashed bananas
3 cups all-purpose flour
1 1/4 cups buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Cream together shortening and sugar. Add eggs one at a time, beating well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in flour, baking powder, and soda. Stir in nuts if desired. Pour batter into two greased 9x5 inch pans.
Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
OR...
BANANA BANANA BREAD
INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
AND THIS ONE IS KINDA FUN AND NEAT TO GIVE AS A GIFT

INGREDIENTS
2/3 cup shortening
2 2/3 cups white sugar
4 eggs
2 cups mashed bananas
2/3 cup water
3 1/3 cups all-purpose flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
2/3 cup chopped pecans
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.
In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.
Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to ';ping'; as they seal. If you miss the ';ping';, wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
Jars should be eaten immediately or kept sealed in refrigerator for up to a week.
My mom has a recipe that includes sour cream( I looked and couldn't find it-sorry!) . I know I didn't give you a recipe, but at least I can give you a hint-look for one that has the sour cream in it, because that will make it moist instead of the usual dry stuff. I swear to you- everyone that has tried it LOVES it. They all say that it's the best banana nut bread that they've ever had. ( if I find the recipe later, I'll come back later and post it) O.K., here it is!(my mom found it). It's called'; Always Moist Banana Bread'; 2 sticks margarine, 1%26amp;1/2 cups sugar, 1%26amp;1/2 cups mashed bananas, 2 eggs beaten, 1 tsp. vanilla, 1/2 cup sour cream , 2 cups flour, 3/4 tsp. salt, 3/4 cup pecans (walnuts if you prefer, but we use pecans), 1 tsp. baking soda. Preheat oven to 325,grease 2 bread loaf pans lightly, then coat w/ sugar. Mix together -MARGARINE, SUGAR, BANANAS, EGGS, VANILLA, and SOUR CREAM. Stir in -FLOUR, SALT, PECANS, and BAKING SODA. Divide batter evenly between the two bread pans, and sprinkle a little sugar over the batter in each pan(optional- we think it gives it that extra something that makes it special). Bake at 325 for 45 min-1hr. (until fork comes out clean). Enjoy! (sorry my instructions don't look better, but I'm still trying to figure out this computer!)

Premix ingredients in order listed. Place mixture in bread machine pan.
Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.
Cook until cake cycle stops. Remove pan, and cool completely before removing bread from pan.

Mix. Place in 2 greased bread pans. Bake 350F 40-50 min.
Muffins: fill 3/4 full. Bake 350F 25 min.

This is a moist, buttery banana bread loaded with banana flavor.
INGREDIENTS:
* 1 cup butter or margarine
* 2 cups sugar
* 4 eggs

* 6 large bananas, very ripe, mashed
* 1 cup finely chopped pecans
PREPARATION:

BANANA NUT BREAD
My mother learned to cook this bread during the Depression, when nothing was wasted 鈥?especially overripe bananas. We clamored for this treat so often that she frequently bought extra bananas and let them get almost black. I've discovered that overripe bananas can be peeled, mashed, and frozen, then defrosted whenever I want to bake up this memory.

2/3 cup whole milk
1 tablespoon fresh lemon juice
2 1/2 cups sifted cake flour (not self-rising; sift before measuring)
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 stick (1/2 cup) unsalted butter, softened
2/3 cup sugar
2 large eggs
2 very ripe medium bananas
3 oz walnuts, chopped (1 cup)
Put oven rack in middle position and preheat oven to 350掳F. Grease a 9- by 5-inch loaf pan and line bottom of pan with wax paper or parchment, then grease paper.
Mix together milk and lemon juice and let stand until milk curdles, about 1 minute.
Whisk together flour, baking powder, salt, and baking soda in a bowl.
Beat together butter and sugar in a large bowl with an electric mixer at high speed until pale and fluffy, about 2 minutes. Add eggs, 1 at a time, beating until combined, then beat in bananas until combined. (Mixture will look curdled.)
Add flour mixture to banana mixture alternately with milk, mixing at low speed just until batter is smooth. Stir in walnuts. Pour into loaf pan and bake until a wooden pick or skewer inserted in center of bread comes out clean, about 1 hour.
Cool bread in pan on a rack 20 minutes, then invert bread onto rack. Remove paper and turn bread right side up on rack to cool completely.
Cooks' note:
Bread keeps, wrapped in plastic wrap, at room temperature 4 days or frozen 1 month.
Makes 1 (9-inch) loaf.
