Preheat your oven to gas mark 4/350F/180C
Grease a 3.5 x 7.5 inch loaf tin and line it with greaseproof paper
(also greased with margerine/butter)
3 oz/75g margerine or very soft butter
4 oz/110g caster sugar
1 large egg (beaten)
8 oz/225g plain flour
2 level teaspoons of baking powder
4 medium bananas (peeled)
grated rind of 1 orange
grated rind of 1 lemon
2oz/50g walnuts (roughly chopped - OPTIONAL)
Place the margerine, sugar and beaten egg in a big mixing bowl, and then sift in the flour and baking powder. In another bowl, slice the bananas and mash them to pulp with a fork. Use an electric mixer to whisk the sugar, egg, margerine and flour mixture together until they are all combined (don't worry if it looks a bit dry at this point). Add the orange and lemon rinds, followed by the mashed bananas (and walnuts if using), then whisk the mixture thoroughly and transfer to your loaf tin. Bake in the middle shelf of the oven for 55 mins/1 hour until the loaf is golden brown in colour. Leave to cool in the tin for 10 minutes, then transfer to a wire rack to finish off cooling. one of my favorite childhood snacks was sliced bananas with sour cream (or plain yogurt if you want a more healthy version) and brown sugar sprinkled on top, it's really delicious and not that bad for you!

Baked Banana Stuffed French Toast
Ingredients
4 ripe bananas, peeled, each cut into 4 pieces
8 thin slices light (reduced-fat) mixed-grain bread
1/2 cup nonfat milk
2 large eggs
1 teaspoon vanilla extract
Pinch of ground cinnamon
Nonstick vegetable oil spray
Powdered sugar
8 large strawberries
Pure maple syrup (optional)
Preparation
Preheat oven to 350掳F. Place 4 pieces of banana on each of 4 bread slices; mash banana on bread. Top with remaining 4 bread slices. Whisk milk, eggs, vanilla extract and cinnamon in glass pie dish. Working in batches, dip bread in egg mixture; let soak 45 seconds on each side.
Spray large nonstick skillet with vegetable oil spray. Heat over medium heat. Working in batches, add French toast to skillet and cook until golden, about 2 minutes per side. Transfer to baking sheet; bake 8 minutes. Transfer to plates. Dust with powdered sugar. Garnish with strawberries. Serve with maple syrup, if desired.What are some good banana recipes?
Battered Fried Bananas Recipe
8 medium bananas
2 teaspoons lemon jui2/3 cup od self rising flour
2/3 cup rice flour
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
1 cup water
4 tablespoon light brown sugar
oil for deep frying
cut bananas into chunks and place them in a large mixing bowl
sprinkle the lemon juice over the bananas to prevent discoloration
sift the self rising flour, rice flour, cornstarch and cinnamon, into a mixing bowl, gradually stir in the water to make a thin batter.
heat the oil in a wok until almost smoking then reduce the heat . slightly.
place a piece of the banana on the end of a fork and carefully dip into the batter, draining off any excess;repeat until all are battered.
sprinkle the sugar on a large plate.
carefully place the banana pieces in the oil and cook for 2 to 3 minutes, until golden brown.remove and roll them in the sugar.transfer to a bowl and serve alone with whipped cream,or with ice-cream

3 cups graham cracker crumbs
1-2 cup butter,melted
3 1-2 cups cold milk
2 (3.4oz each) instant vanilla pudding mixes
5 medium firm bananas,halved lengthwise and cut into 1-2 inch slices
20 oz can crushed pineapple,drained
20 oz container frozen whipped topping,thawed
1-3 cup chopped pecans (optional)
2 1.55oz each milk chocolate bars,broken into squares
maraschino cherries (optional)
combine cracker crumbs and butter.press into an ungreased 13x9x2
inch dish.in a mixing bowl.beat milk and pupping mixes on low speed
for 2 minutes.pour over crust; top with banana slices and pineapple.
spread with whipped topping (dish will be full).sprinkle with pecans
if desired.chill for at least 4 hours before cutting.garnish with chocolate
squares and cherries.
