Banana recipes plz help me?

i have 4 very ripe bananas and i don't want them to go to waste.i was wondering if anyone had any good recipes that could use them.thanksBanana recipes plz help me?

Directions:

BANANA BREAD PUDDING





1 loaf day old Italian or French bread


3 eggs


1 scant cup sugar


1 quart milk or half and half


1 1/2 tablespoons vanilla


4 large ripe bananas, mashed


1/2 teaspoon freshly grated nutmeg


1 teaspoon cinnamon, divided in half


1 cup raisins


1/2 teaspoon fresh, finely grated ginger root


2 tablespoons dark rum or banana liqueur





Put the raisins in the rum or liqueur, and warm briefly in the microwave (20-30 seconds). Allow to sit at least 30 minutes. Stir in 1/2 teaspoon cinnamon and mix well.


Cube the loaf of bread, put it in a bowl with the milk and allow to stand for an hour.





Meanwhile, in a separate bowl, beat together the eggs, sugar, vanilla, and remaining spices. Mash the bananas and combine all ingredients together.





Turn out into a lightly greased 10X12 or 9X13 inch baking dish and bake at 325 degrees for 70-75 minutes or until edges are golden and toothpick inserted in center comes out nearly clean (same test as for cakes).





Cool and serve with whipped cream or banana sauce below.








Optional Banana Liqueur Sauce:

    1 cup toasted walnuts or pecans, chopped


    3 ripe, soft, darkly speckled large bananas, mashed well (about 1 1/2 cups)


    1/4 cup plain yogurt


    2 large eggs, beaten lightly


    6 tablespoons butter, melted then cooled


    1 teaspoon vanilla extract





    Preparation:





    Adjust oven rack to lower middle position and heat oven to 350 degrees.


    Grease bottom only of regular loaf pan, or grease and flour bottom and sides of nonstick 9-by-5-by-3-inch loaf pan.

    4 Tbs. butter


    1/3 cup finely chopped pecans

    2 Tbs. fresh lime juice


    2 Tbs. minced fresh cilantro or parsley





    Preparation:





    Stir together the flour, paprika, thyme and salt on a large plate. Pour milk into a shallow bowl. Heat oil in a large skillet over medium heat until hot, not smoking. Dip fish in milk, then flour mixture. Cook in hot oil, in batches if necessary, until browned on the bottom. Turn fillets and brown other side, about 4 minutes per side for 1-inch fillets. Remove to a platter and keep warm.





    Drain cooking oil and wipe skillet with paper towels. Heat butter over medium heat and add pecans, nutmeg and salt. Cook, stirring, until pecans are lightly browned, about 3 minutes.     4 lbs. chicken thighs and legs (attached)


    1/4 cup fresh lemon juice


    Salt, milled pepper


    3 Tbs. oil


    1 medium onion, chopped


    6 plum tomatoes, seeded, chopped


    Pinch of sugar


    1 cup dry white wine


    1/2 cup low-sodium chicken broth


    3 Tbs. butter


    6 firm-ripe bananas, halved lengthwise


    1/2 cup grated Parmesan cheese





    Preparation:





    Rinse chicken and pat dry with paper towels. Rub it all over with lemon juice and sprinkle well with salt and pepper. In a deep, heavy-bottomed skillet or Dutch oven with a lid, heat the oil over medium heat. Brown chicken on all sides until golden brown. Remove from skillet and keep warm. Add the onion, tomatoes and sugar to pan and cook, stirring, until soft. Return chicken pieces to pan, add the wine and broth, and bring to a simmer. Lower heat and cover pan. Simmer until chicken is tender, about 45 minutes. Set aside and keep warm.





    In another large skillet, heat butter and saute banana halves on both sides until golden brown. Arrange bananas on top of the chicken in the skillet and sprinkle them with the Parmesan.     1/4 c. oil or melted oleo


    1 c. sugar


    1 tsp. soda


    1 c. chopped walnuts or 1 c. raisins, if desired


    1 tsp. salt


    2 c. flour





    Mash bananas (overripe make the best bread). Add oil and sugar. Mix well. Sift flour, salt and soda together and add to banana mixture. Mix until flour is blended (do not beat).


    Put into muffin pans or bread tin and bake at 360 degrees until toothpick comes out clean.


    Optional: Add a handful of oatmeal and some raisins or chocolate chips or currants or some coconut or all of them.








    Banana Chocolate Chip Cake





    This is not only the ultimate banana bread but also the perfect vehicle for overripe bananas. It is based on a recipe that my mom used to make when my brother and I were growing up. I thought that chocolate chips were needed in an otherwise perfect cake. This cake freezes beautifully, so eat one now and freeze one to enjoy later.





    Yield: 8 servings





    2 1/2 cups all-purpose flour (625 ml)


    2 tsp baking soda (10 ml)


    1/4 tsp salt (1 ml)


    1 cup canola oil (250 ml)


    2 cups granulated sugar (500 ml)


    4 eggs


    2 cups mashed ripe bananas (about 4 large) (500 ml)


    1 tsp vanilla (5 ml)


    1 1/3 cups semisweet chocolate chips (325 ml)


    3/4 cup toasted walnuts (optional) 175 (ml)





    Preheat oven to 350 F (180 C)





    Two 9- by 5-inch (2 L) metal loaf pans, lined with parchment or waxed paper, greased





    In a bowl, combine flour, baking soda, and salt.





    In a large bowl, using electric mixer, beat oil and sugar. Add eggs, one at a time, beating well after each addition. Add bananas and vanilla, beating well. Add flour mixture, beating just until smooth. Stir in chocolate chips and walnuts, if using.





    Spread batter in prepared pans. Bake in preheated oven for 60 to 65 minutes or until a tester inserted into center of cakes comes out clean. Let cakes cool in pans on racks for 15 minutes. Remove from pans and let cool completely on racks.





    Tip: You can easily freeze overripe bananas, skin and all. Just be sure to thaw them before mashing.
    Well, if you're interesting in a good banana recipe, you could try homemade banana pudding. It's very simple with a prep time of like 20 minutes and after its prepped, all you have to do if refrigerate for a couple of hours. All you'll need is Jello instant vanilla pudding and some vanilla wafers, (whipped cream if wanted) its pretty good. The recipe can be found just about anywhere, Just buy a box of vanilla wafers and the recipe should be on the side of the box!! It's really easy.

    3)Also, you can mix it with a small amount of sugar and add desired amount of milk. By using an osterizer, with crashed ice ..... BINGO, you have a banana milk shake.





    4) Boil 1 cup of sugar with 1/4 cup of water. Then add mashed bananas. When the mixture is thick already, pour into the moulders and there you are..... Banana Candies.





    5) Nata de Banana....... by using coconut water or juice, add the old bananas and allow the mold to grow for at least 5 weeks. But you need to put the mixture in an steriled dark bottle and cover with paper cloth or just simply a bond paper by using a yarn or thread. Covering the bottles will prevent the fruit flies from contaminating the solution. Once placed in dark bottles, be sure to place them in a dark room. But do not try to touch them till the harvest time. Or else, everytime you touoch the bottle, the mold will not grow in a normal nata thickness and texture.

    You get digestive biscuits and crumble them with a little bit of butter, then pack them in the bottom of a round shallow tin and refrigerate. Then, you take a can of sweetened condensed milk and put in a pan of simmering water for two hours. Take out and spread the caramelised milk over the biscuit base and top with sliced bananas, then with whipped cream (not sweetened).

    Take 1 banana per person and 5 squares of chocolate per banana, any chocolate works, even sliced mars bar.





    make a slit from one end of the banana along the length, piercing the skin and just going into the flesh. Now push the chocolate pieces into the slit. You can add some rum or any other alcohol you like if you want.





    Now wrap them in foil and bake them for about 15 minutes in the oven, a bit less on the grill and serve, the chocolate should be melted and you can eat them from the skin with a teaspoon.

    So today I looked in the fridge and to my surprise I found a whole bunch of very over ripe bananas! I took this as a great excuse to do some baking. But now I don't really know what to make. I've already made a banana pound cake so I don't want anything cake like.But I welcome any suggestions since I need to use up my bananas before they get really bad!

    6 to 8 bananas, sliced


    2 cups milk


    1 (5-ounce) box instant French vanilla pudding


    1 (8-ounce) package cream cheese, softened


    1 (14-ounce) can sweetened condensed milk


    1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream


    Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.





    In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies.





    Refrigerate until ready to serve.

    Banana Walnut Bread Pudding with Buttery Rum Sauce





    Ingredients


    5 tablespoons unsalted butter


    8 cups day-old white bread, such as French or Italian, cut into 1-inch cubes (toast if fresh)


    2 cups heavy cream


    2 cups milk


    4 large eggs


    1 cup light brown sugar


    1/2 cup granulated sugar


    2 teaspoons vanilla extract


    1 1/2 teaspoons ground cinnamon


    Pinch freshly grated nutmeg


    Pinch salt


    5 tablespoons banana liqueur


    2 cups mashed ripe bananas, about 4 small


    3/4 cup chopped walnuts, toasted


    Buttery Rum Sauce, recipe follows


    Whipped Cream, for garnish


    Fresh mint sprigs, for garnish


    Directions


    Preheat the oven to 350 degrees F.





    Lightly grease a 9 by 13-inch baking dish with 1 tablespoon of the butter and set aside.





    Place the cubed bread in a large mixing bowl. In a small saucepan, melt 4 tablespoons of the butter over medium heat and pour the butter over the bread cubes. Using a rubber spatula, toss to evenly distribute the butter.





    Combine the cream, milk, eggs, brown sugar, granulated sugar, vanilla, cinnamon, nutmeg, salt, and banana liqueur in a medium mixing bowl, whisking to combine. Pour the cream mixture over the bread cubes and stir to combine. Let sit for 30 for 45 minutes, or until the bread is soft and has absorbed most of the liquid.





    Stir in the mashed bananas and walnuts. Pour the mixture into prepared dish and bake, uncovered, for 45 to 50 minutes, until the top is golden brown and crispy and the pudding is firm in the center. Prepare the Buttery Rum Sauce while the pudding is baking.





    Remove the pudding from the oven and cool on a wire rack for 15 minutes before serving. Serve warm with Buttery Rum Sauce and whipped cream, if desired.





    Buttery Rum Sauce:


    8 tablespoons unsalted butter, melted





    3/4 cup heavy cream





    1 cup sugar





    2 egg yolks, beaten lightly





    1/3 to 1/2 cup rum, to taste





    In a heavy, nonreactive saucepan combine all ingredients except the rum and cook over medium-low heat, whisking constantly, until the sauce is thickened and coats the back of a spoon. Remove from the heat immediately; do not allow the sauce to boil. Add the rum, stir to combine, and allow to cool slightly. Serve warm with Banana Walnut Bread Pudding. (The sauce can be made up to 1 week in advance and stored, refrigerated, in an airtight container. Warm gently before serving.)

    Well the recipe i have is low-fat and actually calls for the egg whites haha i'll give it to you anyway.


    Almost No Fat Banana Bread


    * 1 1/2 cups all-purpose flour


    * 3/4 cup white sugar


    * 1 1/4 teaspoons baking powder

    * 1/2 teaspoon ground cinnamon


    * 2 egg whites


    * 1 cup banana, mashed


    * 1/4 cup applesauce


    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.


    2. In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.


    3. Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

    For now, throw them in the freezer, whole and unpeeled. They will last there. They'll turn black, but inside is fine. Let thaw on counter about 15-20 minutes before you're ready to bake with them. Pop off one end and squeeze out the banana and juice just like a toothpaste tube.





    Banana Nut Cake with Cream Cheese Glaze





    To a yellow cake mix, add 3 ripened bananas and 1/2 cup chopped walnuts. Bake in bundt cake pan, 350ºF for about 55-60 minutes.





    Create glaze by mixing 3 Tbsp. cream cheese, 1 Tbsp butter, with 1½ cups powdered sugar, 1 tsp vanilla, and 3 Tbsp milk. Add more milk to thin if necessary. Spoon on cooled cake and top with candied walnuts.

    3 sticks butter


    3 cups sugar


    5 large, fresh eggs


    3 overripe bananas (remove any bruises)


    3 Tbsp. half %26amp; half


    1½ tsp. good vanilla


    3 cups flour


    1 tsp. baking powder


    ½ tsp. salt





    PREHEAT oven to 350ºF. Grease %26amp; flour your tube pan. Mash the bananas; add the vanilla and half %26amp; half to the banana, and mix well. In another bowl mix combine the flour, BP, and salt.





    Cream the butter and sugar until light. Add the eggs one at a time, and beat well after each one. Add banana mixture, mix well. Then gently stir in flour mixture until well blended. Scrape down the sides of the bowl about half-way thru mixing.





    Spoon the batter into the prepared pan, smoothing top. Tap pan on counter to remove air bubbles.





    Bake in middle of the oven for 45 min. Turn pan around, and bake for approx. 20 minutes or until done. Do not overbake. Use toothpick test for doneness.





    Allow cake to cool in pan for at least 15-20 minutes, then turn out onto a cooling rack. Top w/ warm glaze (below), and serve any leftover glaze on the side.





    GLAZE:


    1 stick butter


    ½ cup light brown sugar


    1 Tbsp.. rum


    3 Tbsp. Banana liquer





    COMBINE the ingredients in a saucepan over medium heat, and bring to a boil, stirring constantly. Cook for about three minutes and then take off the stove.

    In a large mixing bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine flour, baking soda and salt; add to the creamed mixture alternately with buttermilk. stir in nuts.


    Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.


    For frosting, in a large saucepan, combine the brown sugar, butter and milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; cool to lukewarm.


    Gradually beat in confectioners' sugar until frosting reaches spreading consistency. Frost the cake. Yield: 12 servings.

    Banana Crunch Muffins





    3 cups all-purpose flour


    2 cups sugar


    2 teaspoons baking powder


    1 teaspoon baking soda


    1/2 teaspoon salt


    1/2 pound unsalted butter, melted and cooled


    2 extra-large eggs


    3/4 cup whole milk


    2 teaspoons pure vanilla extract


    1 cup mashed ripe bananas (2 bananas)


    1 cup natural applesauce


    1 cup small-diced walnuts


    1 cup granola


    1 cup sweetened shredded coconut or dried banana chips


    Dried banana chips, granola, or shredded coconut, optional





    Preheat the oven to 350 degrees F. Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, mashed bananas, and applesauce, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.





    Fold the walnuts, granola, and coconut or banana chips into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.
    I like to serve this with melted chocolate or just plain w/ powdered sugar.





    Banana Fritters





    Ingredients:


    1 pound very ripe bananas, peeled and mashed


    6 large eggs, lightly beaten


    1/2 cup milk


    3 tablespoons dark rum or 2 teaspoons vanilla extract


    Grated zest of 1 lemon


    1/2 teaspoon cinnamon


    1 teaspoon salt


    1 teaspoon active dry yeast


    3 cups all-purpose flour


    4 cups vegetable oil


    1 cup flavored granulated sugar


    Confectioners' sugar for dusting





    Directions:


    1) Place bananas, eggs, milk, rum, zest cinnamon and salt in a large bowl. Whisk until blended. Stir in yeast and flour. The batter should resemble egg whites beaten to soft peaks. Let sit, covered, for 30 minutes.


    2) Place oil in a large, heavy saute pan or electric skillet (my choice for this recipe). Heat until oil is 350 degrees F. Using a soup spoon, drop ovals of batter into hot oil and cook, three or four at a time, until golden brown and crisp, about 3 minutes. The oil must be deep enough to allow the fritters to float or they will brown too quickly and be gummy in the center. Drain. Roll in flavored granulated sugar. Repeat until batter is gone. Arrange on a serving plate. Sprinkle lightly with confectioners' sugar and serve warm. Yield: 24 fritters.





    Orange Sugar: Combine 3 tablespoons orange zest with 1 cup sugar. Rub peel into sugar. Spread on a baking sheet and allow to dry for 1 hour. Transfer to an airtight container. Store in refrigerator.

    Ingredients:


    1/2 cup brown sugar


    2 large bananas, quartered


    1/4 cup brandy


    4 1/2 cups flour


    1/2 cup sugar


    2 teaspoons baking powder


    1/2 teaspoon baking soda


    1/2 teaspoon salt


    1/2 teaspoon ground cinnamon


    3/4 pound cold butter, cut into 1/2-inch cubes


    1 1/4 cups plus 2 tablespoons buttermilk


    Egg wash: 1 large egg beaten with 2 tablespoons buttermilk


    Turbinado sugar for sprinkling





    Prepare the bananas: Place the brown sugar in a large skillet over medium-high heat. Add the 2 bananas, cut sides down, and cook for 2-3 minutes without stirring, until the sugar starts to dissolve. Add the brandy and cook for several minutes more, stirring occasionally, until the sugar has dissolved and the mixture thickens. Remove the mixture from the heat and allow it to cool slightly. Chop the bananas and set aside.





    Preheat the oven to 400F degrees. Line 2 baking sheets with parchment paper and set aside. In the work bowl of a food processor, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Pulse the mixture to blend. Add the pieces of butter and pulse the mixture 10-12 times until the mixture resembles coarse meal.





    Transfer the mixture to a large bowl and add the reserved bananas; toss to mix. Add 1 1/4 cups of the buttermilk and mix until just combined and the dough begins to stick together. Add the remaining buttermilk a bit at a time if the dough is too dry.





    Turn the dough out onto a lightly floured surface and pat into two 6-inch rounds about 1-inch thick. Cut each round into 6 wedges and place the wedges on the prepared baking sheets, spaced apart. Brush each scone with the egg wash and sprinkle with turbinado sugar. Bake the scones for 20-25 minutes, until golden brown and firm to the touch.

    Crust:


    2 ½ cups unbleached all purpose flour


    1 ½ teaspoons sugar


    1 teaspoon salt


    ½ cup (1 stick) chilled unsalted butter, cut into 1.25cm (½-inch) cubes


    ½ cup chilled lard or frozen nonhydrogenated solid vegetable shortening, cut 1.25cm (½-inch) cubes – I used regular vegetable shortening


    5 tablespoons (or more) ice water – I needed 6





    Filling:


    2 cups (480ml) + 3 tablespoons milk


    5 tablespoons sugar


    4 tablespoons corn starch


    1 egg yolk - I forgot to add but I liked the result anyway


    1 teaspoon vanilla extract





    Topping:


    6 small bananas, sliced - approx. 2 1/2 cups


    1 ½ cups sugar





    Start making the crust: Blend flour, sugar and salt in processor. Add butter and lard; using on/off turns, blend until mixture resembles coarse meal. If making by hand (which I did): pinch and rub flour and fat between your thumb and fingertips (this works well if you have cook hands).


    Transfer mixture to medium bowl. Add 5 tablespoons ice water and mix with fork until dough begins to clump together, adding more water by teaspoonfuls if dry. Gather dough together. Divide dough – I used ¾ of the dough for the crust and ¼ for the “snakes”; flatten each part into disk. Wrap each disk in plastic and refrigerate at least 1 hour.


    Dough can be made 3 days ahead. Keep refrigerated. If necessary, soften slightly at room temperature before rolling out.





    Preheat the oven to 180ºC/355ºF.

    the lemon juice is only to keep the bananas from turning brown. I doubt it has much to do with the taste of the recipe. The eggs are vital, I would think.
    From a chef....use the orange juice if you can...it does affect the taste a bit....not enough to effect the recipe but lime may be to strong. It will be ok but you do need the eggs. they coagulate to hold the bars together. that is important. Have a good day

    Salt Crusted Hawaiian Opakapaka


    Salt and freshly ground black pepper


    1 each 12 by 12-inch banana leaf*


    12 ounces opakapaka fillet, skinless, boneless


    3 slices Yukon Gold potatoes, 3/8-inch thick, peeled


    2 tablespoons tomato, julienne


    4 tablespoons Napa cabbage, chopped


    2 tablespoons julienne bell pepper


    2 tablespoons julienne carrots


    3 slices lemon


    1 tablespoon picked herbs, such as cilantro, dill, parsley, or basil


    1 tablespoon white wine


    1 teaspoon whole butter, cubed


    3 pounds kosher salt


    3 each egg whites





    Season fish with salt and pepper. On a flat surface lay out the banana leaf. Place fish on leaf laying the potatoes, tomato, cabbage, pepper, carrot, lemon, and herbs on top of fish. Pour wine over and place butter cubes on top. Carefully fold edges of banana leaf to encase the fish in a package.


    Preheat oven to 375 degrees F.


    Mix salt and egg white together. On a greased cookie sheet, spread a base of the salt 1/2-inch thick and large enough to hold the fish package. Place the fish on salt base and continue to pack the salt over the fish until entirely covered. Pack firmly. Bake for 25 to 30 minutes.


    Remove from oven. Gently crack the salt crust with a hammer or back of a knife. Fold open the banana leaf to expose fish. Be careful of escaping steam. Transfer fish with a spatula to a serving platter. Spoon the liquid remaining in the banana leaf over the fish. Serve
    I saw one and tried it and it was awesome. We used dolphin but the recipe called for grouper. Doesn't matter as long as the fish is somewhat thick. Take 1 banana leaf per guest and one cedar plank per guest (or you can double up with two small filet's per plank if you re not big eaters). Cedar planks are available at most supermarkets or house ware stores and give a spicy smoked flavor. Soak the planks in water for a couple of hours so they don't catch fire. take the filet's and cut to size 1 per person and place on the plank. place the plank in the leaf and place on the grill on low heat wrapped up with a little butter and seasoning of your liking. After about 5 to 10 mins depending on how thick the fish is open the leaf and turn the fish. Then add salsa mozzarella cheese and two jumbo shrimp cooked.     I fly the fish on a pan to around 50% cooked then i will take out the fish and place the banana leaf on the pan then put the fish on top of the leaf.


    Last i will add samba chili on the fish n pan fried till the fish meat get soft

    2 cups all-purpose flour


    1 teaspoon baking soda


    1/4 teaspoon salt


    1/2 cup butter


    3/4 cup brown sugar


    2 eggs, beaten


    2 1/3 cups mashed overripe bananas





    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.


    In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.


    Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. Serves 12.

    Banana Cream Pie





    Ingredients


    1 9-inch pie shell, baked


    3 cups whole milk


    3/4 cup white sugar


    1/3 cup all-purpose flour


    1/4 teaspoon salt


    3 egg yolks, slightly beaten


    2 tablespoons butter


    1 teaspoon vanilla


    3 bananas


    Directions


    1Have baked 9-inch pie shell ready.


    2In a large saucepan, scald the milk.


    3In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk.


    4Over medium heat, stirring constantly, cook until thickened.


    5Cover and, stirring occasionally, cook for two minutes longer.


    6In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture.


    7Cook for one minute longer, stirring constantly.


    8Remove from heat and blend in the butter and vanilla.


    9Let sit until lukewarm.


    10When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas.


    11If desired, make a meringue (you'll have 3 leftover egg whites) to top the pie, or just let the pie cool until serving.
    Mix 2 mashed bananas with wheat flour 3 cups, 3tblspn sugar, 1/4th tspn salt, 1/2 tspn turmeric powder and 1/2 tspn of dry cummin seeds. You shall require a small quantity of water as the flour gets mixed up easily with the bananas, make a dough then roll out on a board with the rolling pin make small round size slightly thick and deep fry in hot oil, they are called banana buns in Goa in INDIA.

    COOL 10 MINUTES IN PAN


    REMOVE FROM PAN AND CONTINUE COOLING ON RACK

    I put 2 bananas, couple splashes of milk, 2 tbs of peanut butter, 8 squares of tofu for texture and nutrition, and a handful of ice cubes in a blender and consume it for breakfast. Its especially useful for over ripe bananas that you cant eat alone. Its enough protein to hold your hunger until lunch.

    m. You hear hollow sound, when you tick the bread.

    You can toss them in the freezer whole until you're ready to bake w/ them. Then let them thaw a few minutes on the counter, pop off one end and sort of squeeze out the banana (like you would toothpaste) into a measuring cup. Skin turns black in the freezer, but insides are great!

    2 cups sugar

    3/4 cup whole milk


    2 teaspoons pure vanilla extract

    1 cup small-diced walnuts

    Preheat the oven to 350 degrees F. Line 18 large muffin cups with paper liners.     3 sticks butter


    3 cups sugar


    5 large, fresh eggs


    3 overripe bananas (remove any bruises)


    3 Tbsp. half %26amp; half


    1陆 tsp. good vanilla


    3 cups flour


    1 tsp. baking powder


    陆 tsp. salt





    PREHEAT oven to 350潞F. Grease %26amp; flour your tube pan. Mash the bananas; add the vanilla and half %26amp; half to the banana, and mix well. In another bowl mix combine the flour, BP, and salt.





    Cream the butter and sugar until light. Add the eggs one at a time, and beat well after each one. Add banana mixture, mix well. Then gently stir in flour mixture until well blended. Scrape down the sides of the bowl about half-way thru mixing.





    Spoon the batter into the prepared pan, smoothing top. Tap pan on counter to remove air bubbles.





    Bake in middle of the oven for 45 min. Turn pan around, and bake for approx. 20 minutes or until done. Do not overbake. Use toothpick test for doneness.





    Allow cake to cool in pan for at least 15-20 minutes, then turn out onto a cooling rack. Top w/ warm glaze (below), and serve any leftover glaze on the side.





    GLAZE:


    1 stick butter


    陆 cup light brown sugar


    1 Tbsp.. rum


    3 Tbsp. Banana liquer





    COMBINE the ingredients in a saucepan over medium heat, and bring to a boil, stirring constantly. Cook for about three minutes and then take off the stove.

    Banana Cream Pie





    INGREDIENTS:


    1/2 cup sugar


    1/4 cup cornstarch


    1/4 teaspoon salt


    2 cups milk


    3 egg yolks, slightly beaten


    1 tablespoon butter


    1 teaspoon vanilla


    1 baked 9-inch pie pastry shell


    4 to 5 ripe but firm bananas


    sweetened whipped cream





    PREPARATION:


    Combine the sugar, cornstarch, and salt in top of double boiler. Gradually add milk, mixing well. Cook over rapidly boiling water until thickened, stirring constantly. Continue cooking and stirring for 10 minutes longer.


    Stir a small amount of the hot mixture into the beaten egg yolks then return back to the hot mixture in the pan. Cook for 1 minute longer. Remove from heat. Add butter and vanilla to the filling then let cool thoroughly. Cover the bottom of the prepared cooled pie shell with a small amount of cooled filling. Peel bananas and slice into the pie shell. Cover with remaining filling. Garnish top with sliced bananas, arranged overlapped in a circle about an inch in from the edge. Top with a mound of sweetened whipped cream or whipped topping in center of pie.

    Banana Split Cake





    INGREDIENTS:


    3 cups all-purpose flour


    2 teaspoons baking powder


    1/4 teaspoon baking soda


    3/4 teaspoon salt


    1 cup butter


    1 1/2 cups sugar


    4 eggs


    1/2 cup mashed banana, about 1 large ripe banana


    1/2 cup sour cream


    1/2 cup milk


    1 teaspoon vanilla


    1/2 cup strawberry preserves


    red food coloring


    1/2 cup instant cocoa (sweetened)





    PREPARATION:


    Grease and flour a 10-inch Bundt pan or fluted tube pan; set aside. Stir together flour, baking powder, baking soda and salt; set aside. In large mixing bowl, beat butter on medium speed until light, about 30 seconds.


    Add sugar and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. In medium bowl, mash banana. Add sour cream, milk and vanilla; stir to combine. Add dry ingredients alternately with banana mixture to creamed mixture; beat well after each addition. Reserve 2 cups batter in 2 bowls -- 1 cup of batter in each bowl. Stir strawberry preserves and food coloring into 1 cup of the reserved batter. Stir instant cocoa mix into the other cup of reserved batter. Spoon half of the plain banana batter into pan. Top with strawberry batter. Spoon more plain batter over this. Top with cocoa batter. Bake at 350掳 for 60 to 70 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool for 10 minutes on a wire rack, then remove from pan to cool completely. Sift powdered sugar over cooled cake, or drizzle with a chocolate or vanilla glaze. Serve with vanilla ice cream and sauce, if desired.

    1/2 cup shortening


    1 teaspoon vanilla


    1 cup sugar


    2 eggs


    2 1/4 cups sifted cake flour


    1/2 teaspoon baking soda

    1 cup mashed ripe bananas, about 2 large ripe bananas


    1/4 cup buttermilk





    PREPARATION:


    Cream shortening and vanilla; add sugar gradually, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together the dry ingredients; add alternately with banana and milk to the creamed mixture, beating well after each addition.


    Fill greased and floured or paper lined muffin cups about 1/2 full. Bake at 375掳 for 18 to 20 minutes, or until done. Cool and frost as desired. Makes about 24 to 30 cupcakes.

    half of a 12-ounce box (about 44 cookies) vanilla wafer cookies


    2 bananas, ripe but firm


    1/4 cup sugar


    1/2 teaspoon cream of tartar





    PREPARATION:


    Combine all ingredients in crockpot or a large kettle. Cover and cook on LOW for 5 to 7 hours or HIGH for 2 1/2 to 3 1/2 hours. Or, simmer on stovetop for 1 to 2 hours.     INGREDIENTS:


    1 (3.4oz) pkg each vanilla %26amp; chocolate pudding


    4 cups milk, divided


    60 vanilla wafers


    3 bananas, sliced


    6 tablespoons chocolate syrup, divided


    1 (15 oz) crushed pineapple, drained well


    1 (8 oz) frozen whipped topping


    10 maraschino cherries, drained and halved


    1/4 cup finely chopped pecans





    PREPARATION:


    Cook pudding using 2 cups milk, following package directions. Refrigerate and allow to cool. Arrange 30 wafers in bottom of a 2 quart straight-sided bowl. Spoon vanilla pudding over wafers. Arrange sliced bananas over pudding.


    Drizzle bananas with 3 tablespoons chocolate syrup. Arrange 30 wafers over chocolate and bananas. Spoon pineapple evenly over wafers. Spoon chocolate pudding over pineapple.     Toffe bananas with vanilla yoghurt and orange glaze





    Ingredients


    For the banana


    1 flaky chocolate bar, crumbled


    1 banana, skin-on, split lengthways


    For the vanilla cream


    陆 tsp vanilla extract


    100ml/3陆fl oz double cream, whipped until soft peaks form when the whisk is removed











    Method


    1. Preheat the oven to 180C/350F/Gas 4.


    2. For the banana, push the crumbled chocolate into the slit in the banana.


    3. Place on a baking tray, transfer to the oven and bake for ten minutes, or until the banana is soft and the chocolate has melted.


    4. For the vanilla cream, gently fold the vanilla extract into the whipped cream.


    5. To serve, place the baked banana onto a serving plate with a dollop of vanilla cream

    85ml/3fl oz double cream


    1 banana, chopped


    1 handful ice


    1 scoop ice cream


    2 tbsp marmalade











    Method


    1. Place all the ingredients into a food processor and blend until smooth.


    2. Pour into a tall glass to serve.





    Ingredients


    For the toffee bananas


    50g/1戮oz unsalted butter


    50g/1戮oz caster sugar


    1 lime, juice only


    50g/1戮oz hazelnuts, chopped


    1 banana, peeled and roughly chopped


    For the vanilla yoghurt


    150g/5录oz Greek yoghurt


    1 vanilla pod, seeds scraped out


    For the orange glaze


    50ml/2fl oz runny honey


    1 vanilla pod, seeds scraped out


    陆 orange, juice only











    Method


    1. Preheat the oven to 200C/400F/Gas 6.


    2. To make the toffee bananas, melt the butter in an ovenproof frying pan over a medium heat. When the butter foams add the sugar, lime juice and chopped nuts. Continue to cook for 2-3 minutes, until thickened.


    3. Add the banana and stir well to coat in the mixture. Transfer to the oven and bake for five minutes.


    4. To make the vanilla yoghurt, place the yoghurt and the vanilla seeds into a small bowl and mix well.


    5. To make orange glaze, heat a frying pan and add the honey, vanilla pod and seeds and the orange juice. Stir together well and simmer until the mixture reaches a thick, syrupy consistency.


    6. To serve, place the toffee bananas on a plate, drizzle the orange glaze over and spoon the vanilla yoghurt onto the side.
    Banana Split: The kids will love it.





    Split Banana 3/4 apart and place in dish. Put 3 small scoops of icecream ( Preferrable Vanilla ) in the middle of the banana.


    Place a small scoop of icecream either side of the bana.





    Use the cream out of the can to place on top of the 3 scoops of ice cream in the middle.





    Finish with some granulated nuts or hundreds %26amp; thousands sprinkled over the top.
    ok this is so simple, lay out some tin foil, one piece per banana and add what ever you want, like sugar, tofee, syrup, fruite, just anything nice and sweet, wrap it roughly in the tin foil but not to tight and chuck on the barbeque, it goes all gooey and mixed together, its soooo good!
    Banana pancakes are yummy and loved by my daughter but you do have to cook them on a fry pan although you could use a non stick pan and no butter.





    two mashed bananas


    one cup plain flour


    half cup milk


    third of cup sugar


    one and half teaspoons baking powder


    one beaten egg





    combine all indgredients in a medium sized bowl and mix till combined. place one tablespoon on preheated frypan and when bubbles turn over. Depending on your frypan you might fit 4 to a pan. Serve immediately with mayple syrup and extra bananas if desired

    Evidently you can freeze bananas but the skin will go black but the bananas are supposed to be ok to eat. If you do use this use them in a smoothie or cake.





    I know you can buy dried banana chips but i dont know how to make them you probably need some kind of dehyrating machine that would dry them out for you.
    cook them gently on the hob in orange juice - and some sugar if you like. Then serve them with creme fraiche.


    If it's adults eating them, you can pour some brandy over at the end, then turn off the lights and set fire to the bananas as you bring them to the table, for a great effect! The flame lasts for just a few seconds.
    Chocolate Chip Banana Cream Mini-Muffins Recipe





    * Cream Topping


    * 4 ounces (1/2 cup) cream cheese (half of a large 8-ounce block)


    * 1/2 cup sugar


    * 1 egg


    * 1/2 tsp vanilla extract


    * Mini-Muffins Batter


    * 1/3 cup solid shortening (such as Crisco)


    * 1-1/4 cups sugar


    * 2 eggs


    * 1 tsp vanilla extract


    * 3 medium ripe bananas, pureed with 1/2 tsp lemon juice (1 cup banana puree)


    * 2 cups flour


    * 1-1/4 tsp baking powder


    * 1 tsp baking soda


    * 1/2 tsp salt


    * 1 cup (8 ounces) banana yogurt (see note)


    * 1 cup (about) semi-sweet chocolate chips





    PREPARATION:


    Preheat the oven to 350 degrees F. Line mini-muffin tins with paper muffin cups. Pre-measure all ingredients so you can work quickly.





    Make the Cream Topping:


    In a medium mixing bowl, cream together the cream cheese and sugar with a hand mixer.

    1 banana blossom (1 to 1-1/2 pounds) - available in Asian markets


    2 tablespoons fresh lemon juice


    4 cups water


    1 large whole chicken breast (about 3/4 pound)


    1 cup loosely packed mint leaves


    1 cup loosely packed basil leaves


    1/2 pound mung beans sprouts


    1/2 small red bell pepper, thinly sliced


    1/2 cup peanuts, roasted (see below) and coarsely ground


    1/3 cup Tuk Trey Salad Dressing





    Instructions


    Fill a large bowl with water mixed with the juice of 1 lemon. Set aside.





    Remove the tough outer layer of the banana blossom and discard it, along with the undeveloped ';baby'; bananas inside. Carefully pull away the next several layers of leaves, regularly cutting into the stem to make it easier to break them off (the aim is to keep the leaves whole if possible). Lay several leaves on top of one another and slice the leaves crosswise into 1/4-inch wide strips. To keep the leaved from turning black, place sliced leaves in the acidulated water, turning occasionally.





    Continue in this fashion, releasing the leaves discarding the undeveloped bananas and cutting the leaves into strips, until you reach the ';heart.'; Cut this center in half lengthwise, remove as many';babies'; as possible, and slice the remaining leaves widthwise about 1/4-inch thick.





    In a medium saucepan, bring the 4 cups of water to a boil. Add the chicken breast, return to a boil, reduce the heat and simmer for 10 to 15 minutes, until the meat is tender.





    Remove the chicken from the pan and let cool slightly, then shred the meat with your fingers.





    In a large salad bowl, toss all the vegetables, mint and basil together with the chicken. Setting aside a handful for garnish, mix in the ground peanuts. Add dressing and toss. Sprinkle with the remaining peanuts and serve immediately.





    Roasted Peanuts


    Preheat the oven to 350 degrees F. Put raw peanuts in a shallow pan and bake, stirring occassionally to ensure even roasting , until golden brown, 10 to 15 minutes. Set aside to cool. When the nuts are cold, grind them with mortar and pestle.

    Banana Cookies with Peanut Butter Filling





    1 cup firmly packed brown sugar


    1/2 cup sugar


    1 cup butter or margarine, softened


    1 cup mashed bananas (about 2 medium)


    1 egg


    1 teaspoon vanilla


    2-3/4 cups all-purpose flour


    1/2 teaspoon baking soda


    1/4 teaspoon salt





    Filling


    1 cup Smucker's Natural Creamy Peanut Butter


    1/2 cup butter


    1 cup powdered sugar





    Heat oven to 350掳 F. Beat brown sugar, sugar, and butter in large mixer bowl until creamy; add banana, egg, and vanilla. Beat until well mixed. Combine flour, baking soda, and salt in medium bowl; mix well. Add flour mixture to banana mixture; mix until soft dough forms.





    Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake 11 to 13 minutes or until lightly browned. Cool on wire racks.





    Beat peanut butter, butter and powdered sugar until well mixed. Spread about one tablespoon filling on bottoms of half of cookies. Gently press bottoms of remaining cookies against filling to form sandwiches.





    Tip: Cookies can be frosted. Add one to two tablespoons milk to peanut butter filling, stirring until smooth. Frost tops of cookies.

    BANANA - PEANUT BUTTER COOKIES





    1 1/4 c. flour, sifted


    1/2 tsp. baking powder


    3/4 tsp. baking soda


    1/4 tsp. salt


    1/2 c. shortening


    1/2 c. peanut butter


    1/2 c. sugar


    1/2 c. brown sugar


    1/2 c. ripe banana, mashed





    Sift together flour, baking powder, soda, and salt. Mix shortening, sugars, and peanut butter until creamy. Add mashed banana and the flour mixture. Blend well. Shape into 2 rolls on a lightly floured board. Wrap in foil and chill several hours. When ready to bake, heat oven to 375 degrees. Slice dough about 1/4 inch thick. Place on ungreased cookie sheet and bake until golden brown (about 12 minutes).





    PEANUT BUTTER AND BANANA COOKIES





    2 1/2 c. quick cooking oats, uncooked


    1 1/4 c. flour


    1 tsp. baking powder


    1 tsp. baking soda


    1/4 tsp. salt


    1 c. creamy or chunky peanut butter


    1 c. (2 sticks) butter


    1 c. sugar


    1 c. packed brown sugar


    1/2 c. mashed ripe banana (1 large)


    1 egg


    1 tsp. vanilla





    Preheat oven to 350 degrees. In a medium bowl, combine oats, flour, baking powder, baking soda and salt. In a large bowl with mixer at medium speed, beat peanut butter and butter until smooth. Beat in sugars until blended. Beat in banana, egg and vanilla. Stir in flour mixture. Drop on cookie sheets. Bake at 350 degrees for 10 to 12 minutes.
