Banana Pumpkin Bread





INGREDIENTS:


2 ripe bananas, mashed


2 eggs


1/3 cup vegetable oil


1 1/3 cups canned pumpkin puree


1/2 cup honey


1/2 cup white sugar


2 1/2 cups all-purpose flour


1 teaspoon baking powder


1 teaspoon baking soda


1/2 teaspoon salt


2 teaspoons pumpkin pie spice


1 teaspoon ground cinnamon


3/4 cup raisins (optional)

DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan.


In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan.


Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.Recipes with pumpkin and banana?

Pumpkin Pancakes with Root Beer Syrup, Caramelized Bananas, and Cinnamon Whipped Cream





Pancakes:


1 cup pastry flour


1/4 cup sugar


1/2 teaspoon cinnamon


1/16 teaspoon cloves


1/16 teaspoon nutmeg


1/16 teaspoon allspice


1/4 teaspoon salt


1/2 teaspoon baking powder


1 cup pumpkin puree


2 eggs


1 cup half-and-half


1-ounce melted butter


4 egg whites, whipped to soft peak


2 tablespoon vegetable oil


Root Beer Syrup:


4 (16-ounce) bottles root beer


2 tablespoons butter, room temperature





Caramelized Bananas:


4 bananas, cut in half lengthwise


2 ounces butter


4 tablespoons sugar





Cinnamon Whipped Cream:


4 ounces whipping cream


Cinnamon


1 tablespoon sugar








To make pancakes, sift together all of the dry ingredients. In a bowl, combine the puree, whole eggs, and the half-and-half. Add the flour mixture and stir, being careful not to over mix the batter. Finish with the melted butter. Gently fold in 1/2 the egg whites to loosen the batter and when the whites are nearly incorporated, fold in the remaining egg whites.


Heat the griddle to medium heat. Drizzle enough vegetable oil to prevent sticking and spoon batter onto griddle, spreading them with the back of the spoon. When pancakes are golden brown, flip to finish cooking.





To make the root beer syrup, reduce root beer until it becomes a thick glaze. Whisk in the butter and spoon over pancakes.





Cut the bananas in 1/2 lengthwise. Heat a saute pan to medium and melt the butter and sugar. Stir until sugar dissolves and begins to caramelize. Add the bananas and toss to coat.





To prepare the whipped cream, whisk the cream, cinnamon, and sugar in a bowl until it holds a stiff peak.





To serve, stack the pancakes on each plate. Spoon the syrup over the pancakes, top with the caramelized bananas and a dollop of cinnamon whipped cream.

    You can use any of the other extract flavors - such as Banana, or Almond. If you do use Almond extract, you may have to cut back on the amount (maybe by 1/4 or 1/2 tsp) because it is very strong.

    Anyone get the South African Banana Salad recipe from the Disney Channel?

    It's on a short thing that lasts about 3 minutes between shows, about all of the different ways you can eat bananas from all around the world. The salad is made of lettuce, Bananas, onions and some kind of jelly or jam, was it apricot or ? I didn't hear it because they go pretty fast, I'd like to make it.

    INGREDIENTS:


    2 bananas


    2 tablespoons golden syryp


    戮 cup sugar


    1 egg


    1 cup self-raising flour


    pinch of salt





    WHATCHYA GOTTA DO:


    Heat oven to 180掳C (160掳C fan forced).





    Grease and line the base of a loaf pan.





    In a medium bowl, mash bananas then add golden syryp. Add sugar and stir in.


    Add egg, sifted flour and salt and lightly mix until combined.





    Pour into loaf pan and cook for 30 minutes or until a skewer is inserted into the middle comes out clean.





    Allow to cool in tin for 10 minutes, then turn onto wire rack to cool.





    Enjoy it warm straight from the oven or lightly grill it and then enjoy with butter melting on top.

    I've tried a lot of different recipes and I think this one is the best. It's so moist and it's super easy to make. If you like making fruit breads I have included a few more that my grandma used to make, enjoy!








    Banana Nut Bread





    1 陆 cups sugar


    陆 cup butter, melted


    3 bananas, mashed


    2 eggs, beaten


    2 cups flour


    陆 tsp baking soda


    1 tbs sour cream added to regular milk to make 1/3 cup

    Mix all ingredients together in a large bowl until blended well. Add chopped nuts, mix together. Pour into greased loaf pan about 1 inch from the top. Bake at 350 for 60 minutes.








    Strawberry or Pineapple Bread





    2 鈥?10 oz pkg or 2 boxes frozen strawberries or


    1 鈥?20 oz can crushed pineapple, drained


    4 eggs, beaten


    1 录 cup vegetable oil


    2 cups sugar


    3 cups flour


    1 tsp baking soda


    1 tsp salt


    2 tsp cinnamon


    1 陆 cups chopped nuts (walnuts or macadamia)





    Blend strawberries or pineapple with eggs, oil, and sugar. Sift flour, baking soda, salt, and cinnamon together and add to egg mixture. Stir in nuts.





    Put into 2 or 3 buttered aluminum loaf pans depending on size of pans. Bake at 350F for 1 hour. Makes 2 regular size loafs or 4 small ones. If using small pans decrease the cooking time to 45 minutes.








    This can be made with other flavors as well (like apricot), but the plum is best.





    Grandma鈥檚 Plum Bread with Glaze





    2 cups flour


    1 tsp soda


    1 陆 cups sugar


    1 tsp cinnamon


    陆 tsp nutmeg


    2 small jars plum baby food or 1 can whole plums, seeds removed and pureed in food processor


    1 cup oil


    1 cup chopped walnuts


    1 tsp vanilla





    Add ingredients in large mixing bowl, mix well. Pour in greased loaf pan and bake at 350 F for 45 min to 1 hour, until bread tests not doughy with toothpick. Pour glaze over bread while still hot.





    Glaze:


    录 cup margarine


    录 cup sugar


    2 tbs milk


    1/8 tsp baking soda


    录 tsp vanilla





    Add to saucepan and simmer 3 minutes.

    MAMA'S SOUTHERN BANANA PUDDING





    An easy banana pudding, made with banana cream pudding mix, vanilla wafers, and bananas, baked with a meringue topping. YUMMY!!





    Ingredients:





    *1 large package banana cream flavored pudding and pie filling (6 serving size)


    * 3 egg yolks, slightly beaten


    * 3 - 3/4 cups milk


    * 30 - vanilla wafers


    * 2 large ripe but firm bananas, sliced





    FOR MERINGUE:


    * 3 egg whites


    * dash salt


    * 1/3 cup sugar





    Preparation:


    In a saucepan, combine pudding mix, egg yolks, and milk. Cook over medium heat, stirring, until mixture comes to a boil. Remove from heat. Arrange a layer of vanilla wafers in bottom of a 2-quart baking dish. Add a layer of banana slices and then a layer of pudding. Continue layering the vanilla wafers, banana slices, and pudding, ending with the pudding.


    Beat egg whites with the salt until foamy. Gradually beat in the sugar then continue to beat until mixture forums stiff shiny peaks. Spoon meringue over pudding, spreading all the way to the edge of dish to seal. Bake at 375掳 for about 10 to 15 minutes, until meringue is cooked and lightly browned. Serve warm or chilled. Store in refrigerator.


    Serve 10 to 12.

    Directions





    1. Grease and flour the bottom and 1/2 inch up the sides of a 9x5x3-inch loaf pan; set aside. In a large bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in center of the flour mixture; set aside.





    2. In a medium bowl combine eggs, sugar, banana, apple butter, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter into prepared pan.





    3. Bake in a 350 degree oven about 45 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing. Makes: 1 loaf (16 servings)

    I live in Florida, along the beach in Palm Beach area. It gets so hot down here. I used to live in New York and during the winter months it would get so unbearably cold that you couldn't wait for spring to roll around. In March the cold was like torture because you would have one nice day and then it would dip into that frigid windy cold that just won't go away.





    Florida is similar to that except it is relentless heat and humidity. Just recently we bought a house on a beautiful lake in Tennessee. Now the summer is spent relaxing on a lake in the mountains. It is peaceful and calm. When the world frustrates me too much,I jump on a plane and sit on my deck and chill. I've got the best of both worlds now.

    Use half %26amp; half rather than milk in any of the above recipes and it will be far better. I also recommend making it only 1 day in advance-- the cookies soften a bit but the bananas don't get gross.
    Banana Pudding





    3-1/2 tablespoon all-purpose flour


    1 1/3 cup sugar


    Dash of salt


    3 eggs, separated


    3 cup milk


    1 teaspoon vanilla extract


    1 (12 oz.) pkg. vanilla wafers


    6 medium bananas


    1/4 cup plus 2 tablespoon sugar


    1 teaspoon vanilla extract





    Combine flour, 1 1/3 cups sugar and salt in a heavy sauce pan. Beat egg yolks; combine egg yolks and milk, mixing well. Stir into dry ingredients; cook over medium heat, stirring constantly, until smooth and thickened. Remove from heat; stir in 1 teaspoon vanilla. Layer one-third of wafers in a 3 quart baking dish.     In order to save money on the ingredients, I personally use the store brand name. They taste just as good as the name brand, but for a fraction of the cost.





    I line the bottom of the pan with vanilla wafers, then make the pudding as directed. I slice up bananas and put into the pudding, and pour the mixture into the pan. Then, I line the sides of the pan with vanilla wafers. I set it in the fridge for at least 2 hours before serving!!

    To Make Meringue: In a large glass or metal bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until whites are stiff. Spread meringue into pie pan, making sure to completely cover pudding layer.


    Bake in preheated oven for 15 minutes, just until meringue is browned. Chill before serving.

    Banana pudding is not currently a fashionable dessert. You never see it served in ';good'; restaurants. And when it is found in a restaurant, more than likely it's a dollop of instant banana-flavored pudding with a vanilla wafer stuck in it and a dab of non-dairy whipped topping.





    Perhaps banana pudding gets no respect because of the vanilla wafers. It's likely that vanilla wafers, being ordinary cookies in the familiar yellow box found in stores everywhere, are regarded as pedestrian among gourmets. Of course, your trendy tiramisu, which uses packaged lady fingers as a base, gets away with it.





    When I began thinking about writing this article, I started wondering about the origins of this wonderful dessert. I wondered if banana pudding existed before vanilla wafers and, if that is the case, when did vanilla wafers get their start? And is banana pudding a southern dessert? And if so, why, because good bananas are available everywhere year-round. But there need not be so many questions here. Banana pudding merely lacks glamour, because it certainly doesn't lack anything else you would want in a dessert.





    Is it easy to make? Yes, it is. Well, you have to do a little more than boil water, but it's definitely not difficult to make. It's wonderful warm from the oven or cold from the refrigerator. It requires no exotic ingredients, other than the bananas which, when you think about it, really are pretty exotic. Banana pudding may be the original comfort food.





    The key to great banana pudding is ripe bananas. In fact, they should be very ripe. Yellow with little brown specks. Bananas ripen best in the dark, so put them in a paper bag and check on them until they're perfect.     Preheat oven to 375掳F.





    Give this old favorite a try.
    Take a large box of vanilla pudding mix, make the pudding up and in a large bowl add to the pudding, 1 tub of cool whip ( it can be store brand) one can of sweetened condensed milk, stir until mixed well, then add your vanilla wafers and sliced bananas.





    This a down home southern Alabama recipe, it is rich but very good its always a crowd pleaser.
    you will need 3cups milk , 6 tablespoons margarine, one half cup of sugar , 6 tablespoons flour 2 teaspoons vanilla extract and bananas a sauce pan melt margarine in sauce pan with the sugar, stir in flour , mix will be bulky , slowly pour in the milk on medium heat stir until mixture thickens, when thickened add vanilla stir, add sliced bananas let cool put into pudding cups ,yum yum!

    Its fine to leave out as it wont affect the texture of the final product.     Baking or Cooking is all about you. It is just an additive. IT is not flour or baking owder which makes the dough. You can add anything or leave anything out. Try the others and see. This will not stuff them, but would be nice to stuff them.
    I put cinnamon in almost everything I bake, Biscotti, Cake, muffins. I put it in my pancake batter. It adds so much. Do you have Pumpkin pie spice or apple pie spice in the cabinet? Any of these will work as well. Your muffins are going to just taste a little less WOW without the cinnamon.
    its all good to leave out the cinnamon...but then it wont taste and smell as good! but wont totally stuff up your muffins like they wont explode and whatever...BUT ya know if your gonna bake you should really get yourself some cinnamon

    cinnamon goes well with your banana muffin.without it just makes your muffin plain tasting.it is really ok for today but the next time you try the recipe ,make sure you have either cinnamon or even allspice is ok too...

    1 2/3 cup all-purpose flour*


    1 teaspoon baking soda


    1/2 teaspoon salt

    Heat oven to 350 degrees. Grease bottom only of loaf pan. 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches. Mix sugar and margarine in 2 1/2-quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened; stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, 8-inch loaf 1 1/4 hours, 9-inch loaf 55 to 60 minutes; cool 5 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.

    Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.


    In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.


    Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.


    Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.


    As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to ';ping'; as they seal. If you miss the ';ping';, wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.


    Jars should be eaten immediately or kept sealed in refrigerator for up to a week.
    My mom has a recipe that includes sour cream( I looked and couldn't find it-sorry!) . I know I didn't give you a recipe, but at least I can give you a hint-look for one that has the sour cream in it, because that will make it moist instead of the usual dry stuff. I swear to you- everyone that has tried it LOVES it. They all say that it's the best banana nut bread that they've ever had. ( if I find the recipe later, I'll come back later and post it) O.K., here it is!(my mom found it). It's called'; Always Moist Banana Bread'; 2 sticks margarine, 1%26amp;1/2 cups sugar, 1%26amp;1/2 cups mashed bananas, 2 eggs beaten, 1 tsp. vanilla, 1/2 cup sour cream , 2 cups flour, 3/4 tsp. salt, 3/4 cup pecans (walnuts if you prefer, but we use pecans), 1 tsp. baking soda. Preheat oven to 325,grease 2 bread loaf pans lightly, then coat w/ sugar. Mix together -MARGARINE, SUGAR, BANANAS, EGGS, VANILLA, and SOUR CREAM. Stir in -FLOUR, SALT, PECANS, and BAKING SODA. Divide batter evenly between the two bread pans, and sprinkle a little sugar over the batter in each pan(optional- we think it gives it that extra something that makes it special). We clamored for this treat so often that she frequently bought extra bananas and let them get almost black. I've discovered that overripe bananas can be peeled, mashed, and frozen, then defrosted whenever I want to bake up this memory.

    1 tablespoon fresh lemon juice


    2 1/2 cups sifted cake flour (not self-rising; sift before measuring)

    2 very ripe medium bananas

    Is it possible to turn a banana bread recipe into a muffin recipe?

    It's totally possible! In fact, I am about to do just that. Here are my suggestions:





    Grease the cups well. I use off-brand Pam-type cooking spray, and this keeps the muffins from sticking and makes for considerably less cleanup.





    Fill the cups a bit less than 3/4 full for a ';cupcake'; like shape, or a bit more than 3/4 for a classic ';muffin'; shape (with the wide top).





    Adjust the baking time a bit: If your recipe calls for 45 minutes, start checking them at 30 minutes, if it calls for an hour, start checking at 40 minutes, etc. Since they are smaller, they won't need to bake as long.





    Sprinkle some rolled oats or cinnamon (or both! yum!) on top for decoration.

    essentially bread and muffin recipes are the same, especially if they are sweet breads like banana. You might need to add just a touch extra baking soda into the mix to aid rising in the oven but it shouldn't be much different.





    If you really want to know find a banana or banana nut muffin recipe and compare it to your bread recipe, compare them and find the difference, add or subtract items as needed, you don't need to destroy your recipe to make a muffin.
    You can use the same recipe for muffins. You just might have to adjust the time but the recipes are the same.

    Pumpkin Pancakes with Root Beer Syrup, Caramelized Bananas, and Cinnamon Whipped Cream





    Pancakes:


    1 cup pastry flour


    1/4 cup sugar


    1/2 teaspoon cinnamon


    1/16 teaspoon cloves


    1/16 teaspoon nutmeg


    1/16 teaspoon allspice


    1/4 teaspoon salt

    1 cup pumpkin puree


    2 eggs

    To make pancakes, sift together all of the dry ingredients. In a bowl, combine the puree, whole eggs, and the half-and-half. Add the flour mixture and stir, being careful not to over mix the batter. Finish with the melted butter. Gently fold in 1/2 the egg whites to loosen the batter and when the whites are nearly incorporated, fold in the remaining egg whites.


    Heat the griddle to medium heat. Drizzle enough vegetable oil to prevent sticking and spoon batter onto griddle, spreading them with the back of the spoon. When pancakes are golden brown, flip to finish cooking.





    To make the root beer syrup, reduce root beer until it becomes a thick glaze. Whisk in the butter and spoon over pancakes.





    Cut the bananas in 1/2 lengthwise. Heat a saute pan to medium and melt the butter and sugar. Stir until sugar dissolves and begins to caramelize. Add the bananas and toss to coat.





    To prepare the whipped cream, whisk the cream, cinnamon, and sugar in a bowl until it holds a stiff peak.





    To serve, stack the pancakes on each plate. Spoon the syrup over the pancakes, top with the caramelized bananas and a dollop of cinnamon whipped cream.

    This is what I do cook one large box of vanilla pudding put aside. Slice 3 banana's. Full bowl on bottom with wafers. layer banana's pudding and wafers until bowl is full. Let pudding cool and eat or it's real good hot.

    There's NO yogurt in the Vivanno, not in either variety.





    While I cannot give you exact measurements since we just use the green lines on the cups instead of measuring cups, I can explain to you the ingredients and how to make it.





    If you'd like, you can even go to your local Starbucks and ask for an empty ';ice grande'; cup, that way you can follow along with the lines. Don't ask for the Vivanno cup if you're just getting it for measurements-- that cup itself doesn't have the lines.





    1.) Fill the cup with orange juice up to the first green line.


    2.) Fill with milk (standard is 2%, but you can use whatever you'd like. It doesn't change it much) up to the second green line.

    Yes you add the mix to the milk and no you don't add the other ingredients,(I'm assuming you mean the bananas and vanilla wafers?) you layer them, in a pie fashion or top the pudding with them, either in a glass or pie dish. Hope this helps.

    I have always used Apple Sauce in place of sugar.

    2 small jars plum baby food or 1 can whole plums, seeds removed and pureed in food processor

    1 cup chopped walnuts


    1 tsp vanilla





    Add ingredients in large mixing bowl, mix well. Pour in greased loaf pan and bake at 350 F for 45 min to 1 hour, until bread tests not doughy with toothpick. Pour glaze over bread while still hot.

    *1 large package banana cream flavored pudding and pie filling (6 serving size)


    * 3 egg yolks, slightly beaten


    * 3 - 3/4 cups milk


    * 30 - vanilla wafers


    * 2 large ripe but firm bananas, sliced





    FOR MERINGUE:


    * 3 egg whites


    * dash salt


    * 1/3 cup sugar





    Preparation:


    In a saucepan, combine pudding mix, egg yolks, and milk. Cook over medium heat, stirring, until mixture comes to a boil. Remove from heat. Arrange a layer of vanilla wafers in bottom of a 2-quart baking dish. Add a layer of banana slices and then a layer of pudding. Continue layering the vanilla wafers, banana slices, and pudding, ending with the pudding.


    Beat egg whites with the salt until foamy. Gradually beat in the sugar then continue to beat until mixture forums stiff shiny peaks. Spoon meringue over pudding, spreading all the way to the edge of dish to seal. Bake at 375掳 for about 10 to 15 minutes, until meringue is cooked and lightly browned. Serve warm or chilled. Store in refrigerator.

    I live in Florida, along the beach in Palm Beach area. It gets so hot down here. I used to live in New York and during the winter months it would get so unbearably cold that you couldn't wait for spring to roll around. In March the cold was like torture because you would have one nice day and then it would dip into that frigid windy cold that just won't go away.





    Florida is similar to that except it is relentless heat and humidity. Just recently we bought a house on a beautiful lake in Tennessee. Now the summer is spent relaxing on a lake in the mountains. It is peaceful and calm. When the world frustrates me too much,I jump on a plane and sit on my deck and chill. I've got the best of both worlds now.

    2 ripe bananas, smashed


    1/4 cup orange juice


    1/4 cup vegetable oil


    2 eggs


    2/3 cup granulated sugar





    Add and mix to combine:





    1 1/2 cups flour


    2 teaspoons baking powder


    Pinch salt





    Stir in:


    1 cup chopped walnuts





    Bake for 70 minutes in oiled loaf pan at 350 degrees F.

    I use instant white chocolate pudding mix ( 2 reg boxes) , 2 3/4 cup milk, then I mix it together til it looks like pudding and then fold in cool whip, i then layer nilla cookies and bananas with pudding mixture and sprinkle with some crushed nillas or graham crackers.     Ingredients





    * 1 cup sugar


    * 3 egg, beaten


    * 1 dash salt


    * 2 tablespoons cornstarch


    * 2 cups milk

    Directions








    1Mix sugar and eggs together.

    Combine the milk and vanilla bean in a small saucepan and bring just to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes.


    Whisk the egg yolks and granulated sugar together until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.





    Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter.





    Stir in the banana slices and pour into dessert cups and chill, covered if you don't want a skin, uncovered if skin is your thing.





    Whip the cream with the sugar and cocoa powder until stiff. Keep chilled until ready to serve. Cut banana leaves in long triangles and stick it at the back of the pudding for decoration. Top pudding with a dollop of cocoa whipped cream.

    1 tablespoon pure vanilla extract


    3 cups vanilla wafers


    4 ripe bananas, thinly sliced


    1/2 teaspoon cream of tartar





    Preheat oven to 350掳F. In a large saucepan, combine 1/3 cup sugar, cornstarch and salt; stir until blended. Mix in milk. Cook over medium heat, stirring constantly until thickened and boiling. Boil 1 minute, then remove from heat.





    In a small bowl, whisk egg yolks, then whisk in about 1/2 cup of hot custard until blended. Pour yolk mixture back into saucepan of custard; cook over medium heat, stirring, 2 minutes. Stir in butter and vanilla until blended.





    Place vanilla wafers on bottom of a shallow 2-quart casserole dish. Top with layers of banana slices and custard. Repeat layering, ending with custard.





    In a large mixing bowl, beat egg whites and 1/4 cup sugar at low speed until frothy. Add cream of tartar; increase speed to medium and gradually beat in remaining sugar. Beat until egg whites hold stiff peaks.





    Spoon meringue over hot custard immediately, making sure that meringue touches baking dish on all sides (this prevents it from shrinking). Transfer to oven and bake until golden, about 20 minutes. Remove pudding from oven and cool 1 hour. Refrigerate at least 4 hours before serving

    1 cup Sugar


    1/2 cup all-purpose flour


    1/2 teaspoon salt


    2 cups milk (whole)


    1 teaspoon vanilla extract


    1 tablespoon butter (not margarine)


    4 egg yolks (large eggs or better)


    box of Vanilla wafers


    5 ripe bananas





    Meringue:





    4 egg whites, at room temperature


    5 tablespoons sugar


    1/4 teaspoon cream of tartar


    1/2 teaspoon vanilla extract





    Preheat oven to 375掳F.





    Line the bottom of a 9'; x 9'; baking dish with a layer of vanilla wafers. This recipe will not use the whole box, so you may snack, but don't get carried away.


    Peel the bananas and slice into 3/8-inch rounds; use a ruler (I'm kidding). Cover the banana slices with plastic wrap to keep them from darkening and quickly make your pudding.





    Combine the sugar, flour and salt in a bowl, and stir well to mix. Mash out any flour lumps with the back of your spoon. Set aside.





    In a heavy saucepan, beat the egg yolks well (just use a fork or whisk, but beat them well). Over medium heat, add the flour mixture to the egg yolks, alternately with the milk and vanilla, stirring constantly. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continuing to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. [Note: If you're working with an electric cooktop, adjust the heat so that it's hot enough to boil, but not so hot that the pudding scorches.] Remove from heat.





    Place a layer of banana slices in the baking dish on top of the vanilla wafers. Don't stint and put one slice of banana per wafer. Line those banana slices up edge-to-edge. Pour, spreading as necessary, half of the pudding over the banana layer. Put down another layer of vanilla wafers, another layer of banana slices, and cover with the remaining pudding.





    Beat the egg whites at high speed until they form soft peaks. Add the cream of tartar. At high speed, gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Fold the vanilla into the meringue, and spread the meringue over the pudding, sealing it at the sides of the dish.





    Bake in a preheated 375掳F oven until meringue browns, 12 to 15 minutes, depending upon your oven.

    Original Nilla Banana Pudding








    3/4 cup sugar, divided


    1/3 cup all-purpose flour


    Dash salt


    3 eggs, separated


    2 cups milk


    1/2 teaspoon vanilla extract


    45 NILLA Wafers, divided


    5 ripe bananas, sliced (about 3 1/2 cups), divided


    Additional NILLA Wafers and banana slices, for garnish





    1. Mix 1/2 cup sugar, flour and salt in top of double boiler. Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 10 to 12 minutes or until thickened. Remove from heat; stir in vanilla.





    2. Reserve 10 wafers for garnish. Spread small amount of custard on bottom of 1 1/2-quart casserole; cover with a layer of wafers and a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.





    3. Beat egg whites until soft peaks form; gradually add remaining 1/4 cup sugar and beat until stiff but not dry. Spoon on top of pudding, spreading evenly to cover entire surface and sealing well to edges.





    4. Bake at 350掳F in top half of oven for 15 to 20 minutes or until browned. Cool slightly or refrigerate. Garnish with additional wafers and banana slices just before serving.
