BANANA BREAD PUDDING
1 loaf day old Italian or French bread
3 eggs
1 scant cup sugar
1 quart milk or half and half
1 1/2 tablespoons vanilla
4 large ripe bananas, mashed
1/2 teaspoon freshly grated nutmeg
1 teaspoon cinnamon, divided in half
1 cup raisins
1/2 teaspoon fresh, finely grated ginger root
2 tablespoons dark rum or banana liqueur
Put the raisins in the rum or liqueur, and warm briefly in the microwave (20-30 seconds). Allow to sit at least 30 minutes. Stir in 1/2 teaspoon cinnamon and mix well.
Cube the loaf of bread, put it in a bowl with the milk and allow to stand for an hour.
Meanwhile, in a separate bowl, beat together the eggs, sugar, vanilla, and remaining spices. Mash the bananas and combine all ingredients together.
Turn out into a lightly greased 10X12 or 9X13 inch baking dish and bake at 325 degrees for 70-75 minutes or until edges are golden and toothpick inserted in center comes out nearly clean (same test as for cakes).
Cool and serve with whipped cream or banana sauce below.
Optional Banana Liqueur Sauce:
1 banana sliced
1 tablespoon butter
1 tablespoon banana liquor
1 tablespoon sugar
Saute sliced banana in butter over high heat for 2 minutes, add sugar and liqueur and remove from heat. Stir well and serve over banana pudding. Top with whipped cream.
the term youre looking for is vegetarian not vegan. vegetarian for some twisted reason choose not to eat meats or closet vegetarians that eat cheese;chicken;seafood and dairy products. a vegan and a vegetarian are two different things. a vegan is more than someone who refuses to eat meat a vegan is a person who refuses to eat meat and someone who refuses to use anything that animals were involved in producing. which means any person claiming to be a vegan is a hypocrit. horses and other animals helped make this country to begin with. one animal like horse helped make this country what it is so it is impossible to be a true vegan
Banana Pudding Pie
Creamy pudding and bananas are real crowd pleasers. Bring this dish to a potluck supper or family function, and watch it disappear.
- 1 box plain graham crackers (e.g., Nabisco Original Graham Crackers)
- 2 large bananas, sliced
- 2 large boxes regular vanilla pudding (e.g., Jello-O Instant Pudding) mixed with 5 1/4 cups Silk vanilla soy milk
- 1 can chocolate frosting (e.g., Duncan Hines Creamy Home-Style Frosting, Chocolate)
In a flat baking dish, place a layer of graham crackers and then a layer of bananas. Cover with a layer of pudding. Repeat. Push down a bit on the top layer of crackers to ensure that all ingredients come into contact with each other. Frost the top layer of graham crackers. Refrigerate 1 hour before serving.
Makes 4- 6 servings

Take your vegan margerine and brown the bananas in a non-stick frying pan as best you can (cut in half the length of the banana, then cut those in half, so you have strips with lots of surface area). When they are brown, sprinkle with brown sugar and let that carmelize (1 or 2 tablespoons of sugar) keep the bananas moving while the sugar browns. Put in a bowl to serve and sprinkle with chopped nuts (walnuts, pecans) or granola or maybe fake ice cream.
