Healthy banana cake recipes?

i am making my daughters birthday cake,but i want something with a little less sugar.i am thinking about doing a banana cake with vegan coconut whipped topping.vegan and sugarless would be ideal but it doesnt HAVE to be vegan(were not vegan but i like vegan food,and i cook lots of vegan desserts).i would like to use wheat flour.i need some ideas please.the main thing im trying to eliminate is sugar.Healthy banana cake recipes?

Banana Cake





Ingredients:


6 ripe bananas


1/2 cup melted vegan margarine


1/2 cup all natural sugar


1 1/2 to 2 cups unbleached flour


1 tsp vanilla


dash of cinammon (to taste)


dash of nutmeg (to taste)


***If you like a strong cinnamon/nutmeg flavor, add more.





Directions:


Peel and mash all bananas. Add melted margarine and mix thoroughly. Add all ingredients except 2 tablespoons of the sugar and all the flour. Once well incorporated, add flour, 1/2 cup at a time until batter reaches a paste like consistency. Pour into a lightly oiled 13x9 inch pan and sprinkle with remaining sugar. Bake at 350 degrees for 45-60 minutes or until top is golden brown and cake is cooked all the way through.Healthy banana cake recipes?
This will also fit into two 9'; pans. Shorten bakign time a bit.





Mom's Banana Cake





2 cups flour


2 tsp. baking powder


1 tsp baking soda


1/2 tsp salt


1/2 cup solid shortening


1 1/2 cups sugar


3 eggs, beaten


1 cup mashed ripe bananas


3/4 cup buttermilk


1 tsp vanilla


1/2 cup nuts, if desired





Sift flour, add baking powder, soda %26amp; salt, blend well


Beat shortening, add sugar gradually, beat together well, until light and fluffy. Add eggs, beat well, then add bananas and beat again. Add flour to creamed mixture alternating with buttermilk, a small amount at a time, beating after each addition. Add vanilla, blend well.


Bake in two greased 9'; layer pans at 350 degrees for about 35 minutes. You can also bake it in a 9x13'; pan for 40 minutes at 325潞 if baking pan is glass.


Test with a toothpick in center. If it comes out dry, it's done.





BUTTERCREAM FROSTING:


1/2 cup butter


1/2 cup solid shortening


1 can sweetened condensed milk


1 tsp vanilla


Beat all until very creamy and fluffy. You may have to refrigerate to chill slightly for items to whip to correct texture.
To help make any recipe healthier I've substituted any oil/butter/margarine with apple sauce. Just regular apple sauce, if you want the cinnamon flavour then use the cinnamon apple sauce. Cakes and brownies turn out delicious, and no one ever knows. Only I do.... and I giggle to myself.
