Beijing Banana Toffee (deep Fried Bananas)
4 large banana
1/4 cup all-purpose flour
1/4 cup cornstarch
1 large egg
1 teaspoon water
3/4 cup granulated sugar
2 tablespoons sesame seed, toasted
ice water (large bowl)
For frying
peanut oil, the best to use. Any other oils will change the overall flavor of the item
Directions
Peel bananas and cut them into 1.

Heat frying oil till moderately hot.
Dip the banana chunks into the batter, lift them out one at a time, tap off the excess batter and put them into the hot oil.
Fry for 1-2 minutes, till the batter is golden.
Lift them out right away and drain on paper towels.
Have the bowl of ice water nearby.
Put sugar and sesame seed in a clean dry pot, melt the sugar till it darkens a little.
Reduce heat to very low, just to keep it warm but not burned.
Dip the fried banana chunks in, a few at a time, coat them thoroughly with sugar syrup and sesame.
Lift them out into the ice water to harden, then lift them right now.
Serve right away with vanilla ice cream.

6 tablespoons all-purpose flour
2 tablespoons sugar

1/4 cup milk
1 pinch salt
4 medium banana (the firmer they are, the better)

1Mix together the flour, sugar, egg, milk and salt to make a smooth, paste-like batter.
2Leave to rest for one hour.
3Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.
4Dip the banana pieces into the batter and shallow fry in hot oil for a few minutes or until golden brown all over.

Fried Chocolate Bananas
3/4 cup melted semi-sweet chocolate
12 large wonton wrappers
12 (3-inch) pieces of whole bananas
2 tablespoons butter, melted
Oil for frying
Shaker of powdered sugar
6 scoops vanilla ice cream
1 1/2 cups chocolate sauce, warm
Preheat the fryer. Spread 1 tablespoon of the melted chocolate over each wonton, leaving a 1/2 inch border. Place the banana on the bottom edge of each wonton. Lightly wet the edges of each wonton with the butter. Fold in the ends toward the center about 1/4-inch. Then, beginning at the bottom, roll up the wonton securely, pressing to close. Fry until the bananas are golden, about 3 minutes, stirring constantly for overall browning. Remove and drain on paper towels. Sprinkle with the powdered sugar. To serve, place a scoop of the ice cream in the center of each shallow bowl. Lay two of the fried bananas next to each scoop of ice cream. Drizzle with the chocolate sauce.
Thai Fried bananas
2 tablespoons butter
4 fresh, firm bananas, peeled and cut into 1 to 2-inch pieces
1/4 cup brown sugar
1 teaspoon black sesame seeds
1 lime, juiced
Heat a wok over high heat and add 2 tablespoons of butter. Once melted, toss in bananas and add the 1/4 cup of sugar. Cook down sugar and add the sesame seeds and the lime juice. Stir together and serve.
Mexican Fried Bananas
4 tablespoons butter
1/4 cup brown sugar
1/4 cup orange juice
3/4 teaspoon cinnamon
4 firm, but ripe bananas, sliced
Melt butter in a frying pan, then add the brown sugar, orange juice and cinnamon. Cook over medium heat until sugar dissolves. Add banana slices. Stir and cook over medium high heat for four to five minutes until bananas are golden and liquid is almost caramelized. Serve hot.
* These are great over vanilla ice cream. You can add a little rum or rum extract to the pan to make a special dessert. This also makes a great topping for pancakes, waffles, oatmeal, etc. for breakfast.

1/2 cup water
2 bananas

***Caramel Coating***
2/3 cup sugar
1/3 cup warm water
1 tablespoon oil
Combine flour, cornstarch and baking powder. Add water and stir until smooth. Peel bananas and cut into thirds. Place in batter and turn to coat. In a deep pan pour oil to a depth of 1 1/2';. Heat to 350 degrees. Place batter covered bananas into the hot oil and cook until coating is golden brown, about 2 minutes. Remove and drain on paper towels.
Spray a cooking tray or plate with cooking spray. Fill a serving bowl with ice and cover with water.
For caramel topping: Place sugar, water and oil in a large skillet, stir to blend. Place pan over high heat. When mixture begins to bubble, shake pan continuously to prevent burning (DO NOT STIR - I just sort of rock the pan back and forth on the burner). Continue until syrup just turns a pale straw color, approximately 9 minutes.
Immediately remove from heat. Syrup continues to cook and will turn golden in a few seconds. Drop fruit into syrup and swirl to coat evenly (you need to work pretty fast at this point, and get the fruit in and out of the caramel, cause it's starting to cool and set up).
Place fruit on greased plate so pieces do not touch. Dip each piece in ice water so coating hardens and fruit cools (this sounds odd, but it's what cracks the caramel. Don't worry, it doesn't get soggy).

Melt butter in the pan and fry the banana cut in half lengthwise until brown. When brown add brown sugar and melt then add raisins previously soaked in dark rum or brandy Add some more rum or brandy and sizzle. Add cream. Delicious
