Any good Banana Dessert recipes out there?

I've got tons of bananas and I have no clue what to make with them!Any good Banana Dessert recipes out there?
Banana Banana Bread


INGREDIENTS


2 cups all-purpose flour


1 teaspoon baking soda


1/4 teaspoon salt


1/2 cup butter


3/4 cup brown sugar


2 eggs, beaten


2 1/3 cups mashed overripe bananas





DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.


In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.


Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Ingredients


1/2 cup of unsalted butter, room temperature


1 cup of sugar


1 egg, room temperature


1 cup of mashed bananas (about 2 陆 large bananas)


1 teaspoon of baking soda


2 cups of flour


pinch of salt


1/2 teaspoon of ground cinnamon


1/2 teaspoon of ground mace or nutmeg


1/2 teaspoon of ground cloves


1 cup of pecans (walnuts and chocolate chips are fine alternatives)


Method


1 Preheat the oven to 350掳F. Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.





2 In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.





3 Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.





4 Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.





Makes about 30 cookies.





Berry Banana Smoothie Recipe

Ingredients





1 ripe banana, cut into pieces


2 cups of berries - blueberries (fresh or frozen), strawberries (quartered), or other berries


1/2 cup crushed ice


2 cups plain yogurt


1/4 cup honey





Method


Put all ingredients into a blender and blend until smooth.

Ingredients


2 envelopes (1/4 ounce each) unflavored gelatin


2 cups white grape juice


1/2 cup sugar


5 1/2 to 6 cups of mixed fresh berries and slices of banana (berries can include boysenberries, strawberries, blueberries, raspberries, and blackberries)


Method


1 In a small bowl, sprinkle gelatin over 1/4 cup grape juice; let soften 2 to 3 minutes.





2 Heat sugar with another 1/4 cup grape juice in a small saucepan over medium-high heat until dissolved. Remove from heat; stir in softened gelatin until dissolved, then stir in remaining 1 1/2 cups grape juice.





3 Place berries in a 4-by-8-inch (6 cup capacity) loaf pan; pour gelatin mixture over, pressing berries gently to submerge completely (remove a few berries if necessary.) Refrigerate until firm, at least 3 hours.





4 To unmold, dip bottom of pan in hot water about 5 seconds. Invert onto a serving platter, and shake firmly to relase. Slice to serve.

TOASTED BANANAS





3 medium bananas


2 tablespoons lemon juice


6 flour tortillas (8 or 10 inch size)


1/4 cup sugar


3/4 teaspoon ground cinnamon


2 tablespoons butter, melted


1/3 cup caramel ice cream topping





Grease cookie sheet. Peel bananas and cut lengthwise in half; brush with lemon juice. Place 1 banana half in each tortilla. Mix sugar and cinnamon, reserving 1 tablespoon. Sprinkle bananas with sugar and cinnamon. Roll each tortilla around banana; place seam side down on cookie sheet. Brush with butter. Sprinkle with remaining sugar and cinnamon.





Bake at 450 degrees for 6 to 8 minutes or until golden brown. Place on dessert plates and drizzle with caramel topping.





Yield: 6 tortilla rolls
Banana Split Trifle


1 (3.4oz) pkg each vanilla %26amp; chocolate pudding


4 cups milk, divided


60 vanilla wafers


3 bananas, sliced


6 tablespoons chocolate syrup, divided


1 (15 oz) crushed pineapple, drained well


1 (8 oz) frozen whipped topping


10 maraschino cherries, drained and halved


1/4 cup finely chopped pecans





Cook pudding using 2 cups milk, following package directions. Refrigerate and allow to cool.


Arrange 30 wafers in bottom of a 2 quart straight-sided bowl.


Spoon vanilla pudding over wafers.


Arrange sliced bananas over pudding.


Drizzle bananas with 3 tablespoons chocolate syrup.


Arrange 30 wafers over chocolate and bananas.


Spoon pineapple evenly over wafers.


Spoon chocolate pudding over pineapple.


Spread whipped topping over chocolate pudding.


Spreading to edges to seal


. Cover with plastic wrap, and refrigerate overnight.





Before serving, arrange cherries over whipped topping; sprinkle with pecans.


Drizzle a bit more chocolate syrup over top.


8-10 servings.








Banana Coconut Fritters





oil, for frying


1 cup all-purpose flour, plus 1/4 cup tablespoons for dusting


3/4 cup beer, approximately


1/2 teaspoon baking powder


1/8 teaspoon salt


4 bananas, cut in 1/2-inch slices


1/3 cup shredded coconut


powdered sugar


Preparation:


Heat oil in a deep fryer to 350掳. Combine 1 cup of the flour, the beer, baking powder, and salt to make a good thick batter which will coat the bananas. You might need to thin it with a little more beer or add a little more flour if too thin. Dust the banana slices with the remaining flour, shaking off the excess. Dip the banana slices into the batter, then roll in the coconut. Fry in batches, about 4 banana slices at a time, until golden brown, about 2 to 3 minutes. Remove fritters with strainer or slotted spoon and drain on paper towels. Dust generously with powdered sugar and serve warm.


Makes about 3 to 4 servings.








Orange Banana Smoothie Recipe





2 cups orange juice


1 banana, sliced


Mint leaves or thin orange slices, for garnish, optional





In a blender, whip the orange juice and banana until smooth.


Serve in tall glasses, garnished with an orange slice and mint leaf, if desired.


Serves 2.
Banana Nut Ice Cream





6 beaten eggs


2 cans sweetened condensed milk


4-5 large mashed bananas


1 cup chopped pecans


1 tsp. vanilla


cold milk





Mix all ingredients well. Put in ice cream can. Add enough milk to fill can about 戮 full. Add ice and salt around can, freezing according to manufacturer鈥檚 instructions. When frozen, pack and let sit 2-3 hours to harden.

Rice Pudding with Flaming Bananas





1 quart milk


1/2 cup uncooked long-grain white rice, plus 2 Tbsp.


Pinch salt


1/2 cup sugar, plus 1 Tbsp.


2 egg yolks


1 tsp pure vanilla extract


3/4 tsp ground cinnamon


1/8 tsp grated nutmeg


3/4 cup heavy cream


2 Tbsp. dark rum


6 Tbsp. butter, diced


1/3 cup light brown sugar


4 small bananas, peeled and sliced 1/4-inch-thick


2 Tbsp. banana liqueur


Garnish: XXX sugar, ground cinnamon, cinnamon sticks





Combine the milk, rice, and salt in a saucepan over medium heat. Cook at a low simmer, stirring frequently, until the rice is tender, 35 to 40 minutes. In a mixing bowl, combine 1/2 cup sugar, the egg yolks, vanilla, 1/4 teaspoon cinnamon, and the nutmeg. Add this mixture to the rice and cook over medium heat, stirring constantly, for about 4 minutes, or until the mixture thickens. Remove from the heat and let cool.


Mix together 1/2 cup cream, the remaining 1 tablespoon sugar, and the rum, in a mixing bowl. Using a handheld mixer, beat until soft peaks form. Fold into the cooled rice mixture. Refrigerate for 1 hour.


Melt the butter in a skillet over medium-high heat. Stir in the brown sugar, stirring until the sugar dissolves. Add the remaining cinnamon and the bananas. Cook for 1 minute. Remove the pan from the heat and add the liqueur. Place the pan back over the heat and flame the liqueur. Shaking the pan constantly, cook for 30 seconds. Stir in the remaining 1/4 cup cream and remove from the heat. Spoon the banana sauce in each of 4 bowls. Spoon the pudding into the bowls and top with a little more banana sauce. Garnish with confectioners' sugar, ground cinnamon, and cinnamon sticks.

Bananas Foster Cheesecake with Caramel Butter Sauce





Cookie Crust:


11 vanilla sandwich cream cookies, crushed


3 tablespoons butter, melted





Bananas Foster Filling:


24 ounces cream cheese, [softened]


3/4 cup dark brown sugar


5 teaspoons cornstarch


3/4 teaspoon ground cinnamon


3 eggs


1 egg yolk


2/3 cup pur茅ed banana (2 small bananas)


3 tablespoons banana schnapps


3 tablespoons light rum


2 teaspoons vanilla extract





For crust: In a small bowl stir together crushed cookies and melted butter until well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.





For filling: In a large bowl combine cream cheese, brown sugar, cornstarch and cinnamon. Beat with an electric mixer until smooth. Add eggs and egg yolk, one at a time, mixing to combine after each addition. Beat in pur茅ed banana, banana schnapps, rum and vanilla extract. Pour the cream cheese mixture over the crust. Bake at 350 degrees F. for 15 minutes. Lower the temperature to 225 degrees F. and bake for 1 hour and 10 minutes or until the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the inside edge of the pan. Turn the oven off; return the cake to the oven for an additional 30 minutes. Chill, uncovered, overnight.





Just in case this cheesecake isn鈥檛 quite rich enough to suit your taste, top it off with





Caramel Butter Sauce:


1 cup butter


1 cup light brown sugar


2 tablespoons corn syrup


2 tablespoons dark rum


2 tablespoons Galliano


3 bananas, peeled, and cut into 3/4-inch rounds


1/4 cup heavy cream, scalded





Melt butter with brown sugar and corn syrup in heavy saucepan, stirring often. Stir in the rum and Galliano. Bring to a boil and simmer 2 to 3 minutes, until thickened and bubbling. Add 3 bananas, peeled and cut into 3/4-inch rounds. Remove from heat and slowly pour in hot heavy cream, stirring constantly. Top each slice of cheesecake with a generous portion of this scrumptious sauce.

Bananas Foster Pound Cake


3 sticks butter


3 cups sugar


5 large, fresh eggs


3 overripe bananas (remove any bruises)


3 Tbsp. half %26amp; half


1陆 tsp. good vanilla


3 cups flour


1 tsp. baking powder


陆 tsp. salt





PREHEAT oven to 350潞F. Grease %26amp; flour your tube pan. Mash the bananas; add the vanilla and half %26amp; half to the banana, and mix well. In another bowl mix combine the flour, BP, and salt.





Cream the butter and sugar until light. Add the eggs one at a time, and beat well after each one. Add banana mixture, mix well. Then gently stir in flour mixture until well blended. Scrape down the sides of the bowl about half-way thru mixing.





Spoon the batter into the prepared pan, smoothing top. Tap pan on counter to remove air bubbles.





Bake in middle of the oven for 45 min. Turn pan around, and bake for approx. 20 minutes or until do
Banana bread (loaf or muffins), add in 1 cup of butterscotch chips to batter and then melt some more chips and drizzle over muffins when done








Fried bananas with ice cream. Melt 2 Tablespoons of butter in a saucepan, and add sliced bananas. Sprinkle with 1/4 c sugar and cinnamon to taste. Let fry up until golden brown, then serve over ice cream
First, peel, slice and package in freezer bags several of the bananas for use in smoothies or shakes this summer. It works so well to flavor and make the smoothies cold.





Banana bread--I made 5 loaves this week. 2 Vegan and 3 with eggs. They are all gone.

Banana Pudding--layer nilla wafers, vanilla pudding and bananas in a large bowl. Chill overnight and eat topped with whipped cream....So good!!





Fried or baked bananas--just slice bananas, put in skillet with a bit of butter and fry. It becomes so sweet and delcious. Add a little cinnamon and chopped walnuts or eat plain.





Make a banana cheesecake. I top mine with bavarian cream which you can also find on recipezaar.

When you make pancakes, top them with sliced bananas and nuts and just a drizzle of syrup.





If you have a dog, see if he likes them. Our dog loves them and will run from anywhere in the house when he smells a freshly peeled banana.

When I have to many bananas I always make banana upside down cake, it's just like pineapple upside down cake except you use sliced bananas and pecan instead of pineapples and cherries, my 10 year old daughter likes it so much she requested it for her birthday this year!
