Banana recipes?

I've just bought about a million (ok, 14) bananas because the man on the vegetable stall outside my office is a dreadful old flirt and I can't say no. What on earth am I going to do with them? Any one got any good banana recipes, cakes or otherwise?

Banana Nut Bread





INGREDIENTS


2 cups all-purpose flour


1 teaspoon baking soda


1/4 teaspoon salt


1/2 cup butter


3/4 cup brown sugar


2 eggs, beaten


2 1/3 cups mashed overripe bananas


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.


In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.


Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.























Banana Honey Yogurt Ice





INGREDIENTS


4 bananas, sliced


1 1/4 cups Greek yogurt


1 tablespoon lemon juice


2 tablespoons honey


1/2 teaspoon ground cinnamon


DIRECTIONS


Place bananas, yogurt, lemon juice, honey, and cinnamon into a blender. Puree until smooth, then pour into a freezer-safe container. Freeze until nearly solid, then scrape back into blender, and puree again until smooth. Return to freezer, and freeze until solid.























Banana Chocolate Chip Muffins





INGREDIENTS


2 cups all-purpose flour


1/3 cup white sugar


2 tablespoons Dutch process cocoa powder


1 tablespoon baking powder


1 cup mashed bananas


2/3 cup canola oil


1 egg, beaten


1 cup semi-sweet chocolate chips


DIRECTIONS


In a large bowl combine the flour, sugar, cocoa powder and baking powder.


In another bowl, blend the bananas, oil and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full.


Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely.























Super Strawberry Banana Cookies





INGREDIENTS


1 (18.25 ounce) package strawberry cake mix


2 eggs


1/3 cup vegetable oil


1/3 cup confectioners' sugar for decoration


1 banana


DIRECTIONS


Mix together the cake mix, eggs, and vegetable oil.


Drop by teaspoonful onto foil covered cookie sheet. Cook at 350 degrees F (175 degrees C) for 7 to 8 minutes. Do not overbake. (Overbaking will cause your cookies to be hard as rocks!)


Once your cookies are all done, lightly dust with confectioners' sugar. Place in container with the banana (leave the peel on), and cover with the foil from the baking sheet. After a couple of hours, or overnight, the cookies will take on some of the banana flavor and taste great! I discovered this by accident when I sent the strawberry cookies and a banana together for the dessert in my husband's lunch!























Icey Banana Milkshake





INGREDIENTS


2 bananas, peeled and sliced


6 ice cubes


5 cups milk


1/2 cup sugar


DIRECTIONS


In a blender, combine the bananas, ice cubes, milk and sugar. Cover, and blend for 2 minutes, or until ice is finely crushed.























Irish Bananas





INGREDIENTS


1/2 cup butter


1/2 cup packed light brown sugar


1/2 cup Irish whiskey


4 large bananas, peeled and halved lengthwise


DIRECTIONS


Melt the butter in a skillet over medium heat. Stir in the brown sugar and whiskey. Bring to a boil and cook until sugar has dissolved. Add bananas to the skillet and simmer gently until bananas are tender and glazed with the syrup. Serve immediately with vanilla ice cream.























Banana Split Icecream





INGREDIENTS


2 cups white sugar


3 tablespoons all-purpose flour


1/2 teaspoon salt


1 quart milk


1 (12 fluid ounce) can evaporated milk


6 eggs, beaten


1 tablespoon vanilla extract


1 quart chocolate milk


2 (10 ounce) packages frozen strawberries, thawed


3 bananas, diced


1 (15 ounce) can crushed pineapple, with juice


DIRECTIONS


In a heavy saucepan over medium heat, combine sugar, flour, salt, milk and evaporated milk. Cook, stirring, until bubbles form at edges and mixture is slightly thickened. Pour a small amount of hot milk into the beaten eggs, stirring to combine. Then remove milk mixture from heat and stir the eggs into the milk until fully incorporated.


Stir in vanilla, chocolate milk, strawberries, bananas and pineapple with its juice. Pour into the freezer canister of an ice cream maker, adding milk as needed to bring to fill line. Chill in refrigerator until quite cold, then freeze according to manufacturer's instructions.Banana recipes?
1 Banana (medium banana-120 cal)


Refined sugar(1 tbsp=45 cal; no fat)





Cut banana in thin slices. Arrange slices on a microwavable plate and sprinkle with sugar. Microwave until the sugar melts and the banana is cooked ( 3 min in my microwave but might be less time in more powerful microwaves). Serve warm.





(Brazilian Banana Pie)


This is one of my favorite desserts.





4-5 bananas


6 egg yolks and whites separated


1 cup sugar


1 stick unsalted butter or margarine, melted


vegetable oil (I like Canola)


12 Tbsp of sugar (for the meringue)


Preheat oven to 300掳 F. Peel and halve the bananas. Fry them in a little Canola oil and arrange them at the bottom of a round Pyrex bowl. Mix the egg yolks with 1 cup of sugar, add melted butter and mix well. Pour over the bananas. To make the meringue, beat the egg whites until stiff. Slowly add 12 Tbsp of sugar. Turn mixture (but do not beat) for 15 minutes. Pour meringue over the bananas, or use a piping bag to squeeze it decoratively over the bananas. Cook in oven for 30 minutes. Serve warm. If you make it in the summer, serve it cool.





Another thing I do, is to fry them in a little bit of oil, sprinkle with sugar and cinnamon. Great with coffee.
Try Plaice Caprice. Grill a piece of plaice along with a banana. Serve with chips and peas. Fish and bananas go really well together.
Chocolate Chip Banana Bread





1 cup shortening


2 cups white sugar


2 eggs


2 tablespoons mayonnaise


6 very ripe bananas, mashed


3 cups all-purpose flour


1/2 teaspoon salt


1 teaspoon baking powder


2 teaspoons baking soda


1 cup semi-sweet chocolate chips


1/2 cup chopped walnuts (optional)





Preheat oven to 350 degrees F. Lightly grease two 9x5 loaf pans.





In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.





Bake at 350 degrees F until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely.

Bananas make a great snack too. Slice and add a tablespoon of peanut butter and microwave for 30-45 seconds. Add chocolate chips or syrup if you want.
I love Banana Pudding. It's quick and simple, all you need is vanilla pudding mix and a box of vanilla wafers. Check out other recipes at www.kraftfoods.com

Banana Curry


1. In a medium skillet, melt 2oz butter. Fry 2 small onions (chopped) until soft. Add 1 apple (peeled and diced), and 1/2 tsp salt.


2. Run boiling water over 3oz sultanas and add to the apple %26amp; onion mixture.


3. Sprinkle in 1 1/2 oz flour and 2 tsp curry powder. Stir and cook for 3-4 minutes. Remove from heat.


4. Gradually stir in 1/2 pint milk and 1/4 pint water. Return to heat and stir until thick.


5. Add 4 bananas (peeled and chopped). Cook gently for about 7 minutes.


6. Add 4 hard boiled eggs (quartered). Continue cooking until the eggs are heated through.


7. Serve with boiled white rice and chutney.

Cut the bananas in 2, in their lenghts.


In a pan, put butter and the bananas.


Sprinkle them with a little sugar. Cook both sides, but careful, they need to stay firm.


Pour some dark rum on top and light the fire.


Turn them while burning, and tada, a delicious dessert. Very rich, but yummy

why not cover them in batter,deep fry and cover with hot strawberry jam.heat jam up then strain through a sieve so it`s runny and pour over fried bananas.
mouchie 1 has the right idea i have the same recipe and it is lovely, especially with some vanilla ice ceam on the side
When bananas get really ripe and only good for baking, I freeze them whole without peeling. To use just thaw, mash, and measure according to your recipe. Works well for me as I never seem to have time to bake when the bananas are ready.
banana's have 'other' uses... as long as they're still firm and not too ripe
This will sound bizarre, but it is so fabulous:





- Make or buy a caramel sauce (I never get mine to work, so I buy)


- Buy some spring roll wrappers or egg roll wrappers


- Take however many bananas you are using then peel them and cut them into smaller pieces (about 4-6 inches depending on how you want to wrap them - see below)


- Combine some brown sugar and cinnamon (enough for about one tsp for each piece of banana)


- Put a piece of banana on a wrapper and brush the banana with lime juice if you have it - if you don't have it, don't worry, it's not essential


- Sprinkle 1 tsp or 1/2 tsp of sugar/cinnamon mixture onto the banana


- Roll the banana in the wrapper - you can either wrap the banana completely or if you are using larger pieces let the ends hang out - whatever you like best - brush wrapper with egg white where you are sealing it (sometimes I just use water)


- Heat some oil (I know, but it's worth it) on medium high heat, and once it's hot, fry the banana spring rolls, turning them as needed (don't crowd the pan)


- When the rolls are gold coloured, which doesn't take long, drain them.


- Serve them with the caramel sauce and some ice cream.





They are so great - crunchy on the outside, soft banana on the inside. Fantastic if you have someone over because they seem fancy but don't really take alot of time - most of it can be done ahead of time, then you just fry them up, pop your store bought caramel sauce in the microwave to heat a little (sometimes I add a tiny bit of rum to thin it a bit and give flavour), and voila! you are a superstar.


You really need to try these! And then you can tell the old flirt about how delicious his bananas were...
i really like bananas chopped up with cream all over them a slightly healthy pudding x
Barbecued Bananas Recipe





Ingredients:


4 bananas


1 tablespoon lemon juice


1 cup brown sugar


1 teaspoon ground cinnamon


2 cups vanilla ice cream





Directions:





Lightly oil grill and preheat to low heat.





Halve each of the bananas lengthwise, then widthwise. Sprinkle bananas with lemon juice. In a small bowl mix together the brown sugar and cinnamon; roll banana pieces in sugar/cinnamon mixture until semi-coated.





Arrange bananas on heated grill and cook for 3 minutes on each side. Serve in a bowl with vanilla ice cream and sprinkle remaining sugar/cinnamon mixture over the top. Yum!

Desserts!





Add a little butter %26amp; A little olive oil to a hot pan (the oil prevents the butter from burning) Cut 3 bananas in half and add to the pan. Add a liquor (you can use a dark rum or a banana liquor)





BE VERY CAREFUL!!!! A flame will rise but it will subside soon. When bananas are caramelized add to a bowl of Vanilla bean Ice cream. eat as is or add chocolate syrup.





You can also buy crescent pastry rolls (the ready bake ones) Spread them out and stretch them so you can create a poket for some bananas.





Take a few bananas and cut them into small slices. Repeat above step...add to hot pan with butter but this time sprinkle come sugar on top instead. Let it caramalize and cool. Then add to center of pastry doughs. Fold up corners of dough to form little purses. Bake as directed ;-)





You can also make fruit salads by adding strawberries, apples and oranges to a bowl of chopped bananas...a delicious breakfast or snack.

BANANAS IN COCONUT CREAM


5 bananas, Cut into 2-inch pieces


2 cups coconut milk, Low fat is fine


4 tablespoons granulated sugar


1/2 teaspoon salt


1 cinnamon stick


Garnish


1/4 cup toasted coconut


1 mango, peeled pitted and cubed (optional)





1. In a saucepan, heat the coconut milk with the cinnamon, sugar and salt, and cook gently until the sugar has dissolved. Add the banana pieces and cook gently for 5 minutes.


2. Remove cinnamon and discard.


3. Divide the mixture into 6-8 small bowls and serve warm.
Make a chicken curry with honey and bananas...





Sounds odd, but it's gorgeous...





Leave the chicken to marinade in runny honey, with a chopped squeezed lemon thrown in... (overnight in the fridge is best, but a couple of hours at room temp will do)





Lightly fry some finely sliced onion and garlic, then add the chicken and honey (remove the lemon pieces)





while it's simmering, add a little salt, some black pepper, a teaspoon of finely chopped chillies and ginger (lazy chillies/ginger/garlic are fine)





(Optional) Add a little lemon grass, maybe some star anise, any other herbs/spices you think would be nice...





add 1 banana per chicken breast, peeled and chopped...





Once the bananas have desolved, serve on a bed of coconut rice, for a truly astounding oriental tasting dish...





It's a very sweet curry, so you can make it really spicy if you like it hot...





It's a good way of introducing kids to curry...
